How to make the best Senegalese Thieboudienne I Red Rice with Fish for your family

INGREDIENTS: * 6 habanero chili’s, omit or adjust amount to suit your heat tolerance.
* 4 sweet peppers, substitute with 2 large green bell peppers
* double thumb size ginger peeled
* 8 gloves of garlic
* 1 teaspoon fennel seeds, substitute with the same amount and seed or two star anise
* 1/2 teaspoon freshly crushed black pepper
* 1 teaspoon salt (adjust amount to suit your taste)
* 1 teaspoon homemade all purpose seasoning (substitute with 1 vegetable, or chicken seasoning bouillon cube)
* 4 scallions or spring onions
* 1 hand full or cup of parsley
Rest of vegetables:
** prep by cutting into big chunks as shown in the video**
* 1 small tuber of cassava/yuca
* 1 yellow squash (optional)
* 2 egg plants
* 1 tuber of sweet potato
* 4 okro (leave whole) optional
* 4 sweet peppers left whole (optional)
For red rice/ tieboudienne:
* 8 cups of broken jasmine rice
* 3 and 1/2 pound grouper fish (substitute with croaker fish, red snapper, fish pompano, fish tilapia, fish halibut), avoid oily or filleted fish.
* oil for shallow frying
* 6 Roma tomatoes
* 2 red bell peppers
* remainder of fresh green relish
* 1 teaspoon all purpose seasoning substitute with one chicken or vegetable bouillon cube
* salt to taste
* 1/2 teaspoon crush black pepper
* 1 tbsp curry powder
* 15 grams cured fish
* 1 & 11/2 liters of water
* 1 & 1/2 cups tomato paste

Yes all African foods are so delicious,but you have to know that all this Rice as different tests,the Nigeria rice as is own unique favors,the Ghana rice as also his own favors and like the Senegalese rice also as his own tests …to me as an Nigerian I enjoy good food for the best pot and cooking …is not about country but all about the good ingredients and cooking that matters ..

I'm Nigerian but when I first tasted this Benechin I had a new favorite 😍 I even flew to Senegal 🇸🇳 and Gambia 🇬🇲 and had this dish. I can say it was the best meal I've ever had. You've given me courage to try and make this dish.

I just want to say I made this. I did my best but probably lacking. Since I'm American, I know nothing about African food, yet I have always been so intrigued by the ingredients and resources, the beautiful culture and style of the many countries. I want to learn as much as I can and your videos make it much easier to learn the cuisine. It was so tasty, and even my brother said this is the best rice he ever had! I will definitely be using your other recipes from now on since they are organized very well and clear to understand and follow. I'm so glad to have found your channel. I'm slowly starting to appreciate the enormous culinary wealth of the sub-Saharan Africa. I think Europe is still clueless when it comes to African food, which is a crime against palate, because Nigerian, Malian, Senegalese, Ghanian and Ethiopian dishes look heavenly! I've always found the Jollof rice battle between Ghana and Nigeria hilarious and yes to me personally nothing touches Thieboudienne, Senegalese food in general is just AMAZING! I'm Congolese and my cousin married a Senegalese woman, she makes delicious food.

Actually Jolof rice is from Senegal, I am a Gambian and I can tell you that Jolof was one of the seven kingdoms of the Wolof tribes dating back to even before colonialization. My theory is that a Nigerian must have visited one of Senegal’s Wolof Kingdoms (most likely Jolof) tasted it, loved it and brought the Unmastered version back to Nigeria and named it after the place he tried it thus the Jolof rice and the difference in taste and the recipe. This is my theory 😊

I'm Ivorian and this is one of the best dishes I've ever ate. It's one of the most popular dishes in Ivory Coast. You know what? Senegalese food is hands down the best food in Africa without question. Mark my words. That's why I always laugh in my headwhen I hear people brag about their "jollof rice", cuz it Ain't even a close comparison 😅😅🤣🤣

So I'm guessing us Nigerians looked at all the ingredients that goes into the Senegalese jollof rice and were like all that ingredients for one meal will feed a family for a week. So we just stuck to just using peppers, onions and tomatoes. I mean don't get me wrong it tastes amazing but that's a lot of ingredients for one meal. But it definitely wins hands down. Funny thing is you never hear any Senegalese person trying to convince anyone ( unlike our dear Ghanaians and Nigerians) that their jollof rice is the best. I guess when you know you are the best you don't need to argue about it. As a Nigerian who has tasted Senegalese jollof it is the best (If you know you know).

I love your comment. It has me giggling. I'm not African, but you could say I'm someone who loves learning about world foods. To my knowledge, West African cuisine is not well known outside Africa (There might be exceptions to this in some pockets of European cities which I'm unaware of.) I tasted all of them the Senegalese one is def top tiers. The others are good too but you can’t eat it alone unlike the Senegalese rice it tastes good without anything too 😂

@@godwinejiofor8064 it's kinda true. The argument came about because of competition between Ghana and Nigeria. It wasnt really about proving that we have the best jollof rice rather that we have a better dish than the other country as ghanaians tend to argue with Nigerians about things. And it so happened to be jollof rice because it's one of the recipes that we both have but make distinctly different unlike the other recipes such as agege bread which they call Ghana bread but actually came from Nigeria. I actually noticed that the yoruba give credit to where a dish originates from but Ghana tends to claim it as their own. E.g. ewa agoyin from the agoyin ethnicity, agege bread from agege, jollof rice from wollof kingdom, etc. Either that or they keep the same name for the dish they got from elsewhere and dont rename it. But it's not to say that it isnt Nigerian food as its part of our culture but not an original thing we made.

In Senegal, there were a lot of Kingdoms, Jolof was one of them and one of it's Kings was Alboury N'Diaye, so I want to tel to our Ghanaen and Nigerians brothers and sisters that jolof rice comes from Senegalese Thiébou Djieunn. Jolof, Olof, Wolof all come from Galsen(Senegal).

The Senegalese Jollof is the original! Jollof is the name the British used to call the Wollof people of Senegal and Gambia. Jollof is one of the six kingdoms of the Wollof and is a region in modern day Senegal. Nanaaba you did a great job! I am Wollof from Senegambia and this dish is not an easy one to cook.

Tips for cooking fish “Jollof” include using Thai Fish sauce instead of dried or fermented fish. Use fewer onions for the sauce and the stuffing for the fish goes in a hole the size of a finger. Do it on one side only for each piece of fish to accommodate those who may not like it.

Ate this dish everytime I could in Europe. Where there were senegalese, you had this iincredible rice. Together with a hot chili pepper and a bit of tamarind on the side. Amazing dishi. Next week Ill try it. Thank you!

That’s their Jollof rice. That’s how Senegalese and Gambians cook their Jollof rice, which is the original. The have both the red and white jollof rice which is also called, ‘Benechi“ . All other West Africans borrowed jollof rice and created their own way. Thanks for sharing. Good on!

Four hours to make this amazing and delicious meal. Every hour was worth it!! I have followed the ingredients, recipe and prep to the T. Instead of cassava, I had to use jasmine rice because the stores in the area only sold leaves. My family loved the spices, the flavor, and the texture. This is the original "jollof" rice.

Good job Dear. I have to say though you don’t need the curry in it( not part of the traditional dish. Also we put more Pearsley in the fish relish than onions. You can also take some Bissap the hibiscus leaves that are called “oseille” in French, cover the dried fermented small piece of fish, attach it together and put in the stew. It gives a super good taste yet lemony. You can also have some shrimp in the rice and some tamarind seasoned with 2 to 3 tablespoons of the stew and set aside for those who like the flavor. I have been in Ghana for 3 years and my favorite dish there is your okra stew. Your thieboudiene is very well done thank you for choosing to make this video. 🙏

This is very similar to the red rice I grew up eating. Red rice is a staple Gullah people from Sea Islands of South Carolina make and eat. You add veggies, meat (sausage usually), rice and tomato sauce. DELICIOUS!

I made this and it has truly changed my life. The broken rice, the veggies on top, everything is definitely an elevated “jollof” experience. I’ll be swapping out my regular jollof recipe for this from now on. Or at least include more whole veggies on top like this. PS I love all the energy you bring to your videos. Thanks for all the detailed explainations. I will try surprising my wife with this 😁 In Senegal, we pre-cook the rice using the sauce hot stream before adding it to the sauce. Also, note that thieboudieunne literally means rice with fish. It can be red (when adding tomato) or white. Thanks again!
