BETH'S GRILLED CHICKEN CHIMICHURRI
Serves 6-8
INGREDIENTS:
8 boneless, skinless chicken breasts
1 cup (240 ml) red wine vinegar
½ cup (120 ml) grape seed oil
3 tsp (45 ml) grain mustard
1 tbsp (15 ml) Worcestershire sauce
1 tsp (5 ml) oregano
2 tsp (10 ml) salt
Freshly cracked pepper
1 garlic glove, minced
CHIMICHURRI SAUCE
1 cup (240 ml) Italian Flat Leaf Parsley, finely minced
1/4 cup (60 ml) fresh oregano, finely minced
1/4 cup (60 ml) red wine vinegar
½ cup (120 ml) olive oil
3 garlic cloves
¼ tsp (1.25 ml) red pepper flakes
½ tsp (2.5 ml) salt
METHOD:
Prepare the marinade. In a large shallow casserole dish, combine the red wine vinegar, grape seed oil, grain mustard, Worcestershire sauce, oregano, salt, pepper and garlic. Whisk to combine. Lay in chicken, coating on both sides. Marinate 20 mins.
Meanwhile prepare the chimichurri sauce. In a small bowl combine all ingredient and whisk with a fork.
Grill chicken on a medium high grill 4-6 mins each side. Allow to rest 10 mins. Arrange chicken on a platter and spoon chimichurri over the top. Enjoy

I tried your lamb pesto recipe, it was great :) On a separate note, I suggest that you get a flat whisk, which will make whisking marinade sauce in a flat pan easier~

Oh sure that's called "creeping fig". It takes a few years to "take" but after that it really takes off!! It needs to be clipped frequently and that makes it grow and stick to the wall faster :) You can se how it started as just little stalks in this video where you'll see what the garden looked like before/after. Aren't those cute? :) I got them at cost plus world market www.worldmarket.com/ I don't see them on there now, but usually every summer they pop up in their stores :) so you could check back in the spring

Beth, my husband is very picky about his grilled chicken. He likes it juicy whereas I always end up making it too dry and chewy. I don't have an outdoor grill. Do you have tips how I can create the perfect juicy grilled chicken indoors?

molsiav oh sure, I find buying chicken on the bone is a sure fire way to ensure juicy chicken. The bones keep it moist. This is a great easy recipe using that technique that I think hubby would love :) Keep me posted! Beth's Soy Glazed Chicken

Oh sure it would be great with either. But for those cuts of meat, best to marinade a bit longer maybe 40 mins-1hr since they are so tough :) Enjoy!

Oh ok. Be careful with that creeping fig plan though. I heard it can damage the walls of the house over time. But it sure looks beautiful. Can you do a garden update?

Valentine Lissar Ha so true! It IS really aggressive which is why we only have it around our wall. Yes I definitely need to do a garden update soon! Probably this spring as its the end of the season here and things are pretty bleak at the moment :(

uuuh I love chimichurri sauce, it can actually manage to be easier to make than pesto lol how can I substitute the Worcestershire sauce in the marinade, Beth? I seriously cannot find it here :/

a mixture of fish sauce, soy sauce and sugar or honey should give you a similar flavour profile. :)

Entertaining With Beth worcestershire sauce is basically fermented anchovies, onion, garlic with added salt, sugar and a bunch of other lavorings (there is a nice video called "How Its Made Worcestershire Sauce" if you're interested to watch). I find that the fish sauce gives you a similar "umami" funkiness and the sugar and soy help settle it down. i'd normally add a bit of vinegar too, but your recipe already calls for it, so i didn't mention it. thanks for your videos! watching your new video is the first thing i do when I wake up on Saturdays! :D

Entertaining With Beth it's the same thing as English Sauce??? you have got to be kidding me. LOL English Sauce is actually much easier to find (I'm pretty sure I have it on my pantry..), I'm so shocked right now hahahaha

Yes it's called "Some Day". But it's actually just music from a licensed production music library so I'm not sure if it's available for purchase anywhere. But you certainly can try to find it online somewhere! :)
