These Cheddar Cheese Coins are a fantastic cocktail nibble for your Thanksgiving Menu. This is the final recipe in our Quarantine Thanksgiving Series. What I love about this appetizer idea is that it's easy, delicious, and uses pantry staples!

BETH'S CHEDDAR CHEESE COINS
Makes 16

INGREDIENTS:
¾ cup (90g) flour
½ tsp (2.5 ml) baking powder
¼ tsp (1.25ml) salt
Pinch of cayenne pepper
¼ cup (60g) chilled butter, diced
½ cup (65g) cheddar cheese
1 egg yolk
METHOD:
In the bowl of a food processor, add the flour, baking powder, salt, and cayenne pepper. Pulse to combine. Add the butter and pulse until a coarse meal develops. Then add the cheese, pulse until crumbly. Then add the egg and pulse until a coarse meal develops that sticks together.
Transfer dough to a cutting board and roll out into a log 1 inches in diameter and 4 inches long (2.5cm x 10cm). Wrap in parchment paper and refrigerate at least 1 hour.
Cut the coins into ¼ inch (6 mm) slices, transfer to a baking sheet lined with parchment paper. Bake at 350F (176C) for 15 minutes.
Serve warm or at room temperature.

@@EntertainingWithBeth I think a Christmas dinner would be best. You gave us 2 Christmas brunches by now, and I would love to see a new Christmas dinner (preferably with some dessert!). As mentioned, cannot wait!!

@@EntertainingWithBeth mutual agreement ;) Here's one little factor that I, personally, would love to see: healthier, lower-calorie versions of the traditional party food. What do you think about that? A quarantine Christmas dinner with dessert that also has a healthy spin - delicious!

I have been such a huge fan ever since I discovered your "Christmas Breakfast" dinner a few years ago... you are so CONSISTENTLY WONDERFUL!! And festive!! Thank you for these!!! These menus are so helpful as I tend to only plan for heavy dishes... heavy app, heavy main, heavy side, heavy dessert... blech! You help me find a balance there. Thanks so much!!

Ha! It's so true, I find planning a menu is all about that balance! Kinda like getting dressed or putting on makeup...Simple dress, statement jewelry, dark smokey eyes, light lips and so on, otherwise it's just all too much ha! Hope you enjoy!

Thanks for this recipe Beth...I'd like to give it a try but I don't have a food processor. Any suggestion how to do it without? On another note....your green sweater is so flattering

Aww thanks so glad you like it! I thought the color was festive :) As for an alternative to the food processor, I would use an electric mixer. But combine it this way: Use softened butter, beat until soft, then add the cheese, and beat, and then the egg, beat and then slowly add the dry ingredients (that you pre-whisked together in a small bowl) Then roll into a log and refrigerate. Hope that helps and hope you enjoy! :)

Hi Beth! Oh! I so want to make these for Christmas, but I do not have a big food processor, I only have a very small one. Is there another tool I can use to I make this recipe?

You know what I would do is just cut the recipe in half and make two batches. Since the food processor will give you the best texture. To split the the egg yolk, just beat it first then spoon out half the amount for each batch. Alternatively you could use an electric mixer, but my first choice for the nice crumbly texture would be your smaller food processor :) Hope you enjoy them!
