Betty demonstrates how to make a Tomato, Cucumber, and Avocado Salad. This is a healthy salad consisting of tomato, cucumber, avocado, red onion, and cilantro with a light lemon-olive oil dressing.
Tomato, Cucumber, and Avocado Salad
1 pound fresh roma tomatoes, chopped
1 medium cucumber, chopped
½ medium red onion, sliced into half-slices
2 avocados, chopped
¼ cup fresh cilantro, chopped
2 tablespoons light-tasting olive oil
2 tablespoons lemon juice
freshly-ground coarse sea salt, to taste
freshly-ground black peppercorns, to taste
Place prepared tomatoes, cucumber, avocados, red onion, and cilantro in large salad bowl. Drizzle with olive oil and lemon juice. Season with freshly-ground salt and pepper. Toss gently. Serve immediately or cover with plastic wrap and refrigerate until serving time. This is a great, healthy salad. Enjoy! --Betty :)
