Much respect bro, your doing a great thing by teaching the future generations a proper well paying trade that’s in great demand and in the next few years since the generation doesn’t work with their hands as tradesmen the tradesmen will make more money then surgeons.
Whenever you are reviewing plans you should always be able to submit any questions you may have to the "Owner/Engineer" that drew up the plans. This will ensure you are bidding the correct material or whatever the question may be. I work in the construction industry as an "owner" and we always allow time for contractors to review and ask questions. We like these questions because all engineers don't get everything right, they miss stuff too so we want to be sure we get what we want in the field. Don't be worried about asking those questions so you don't loose a job on something that you might be guessing, never guess. Keep up the hard work!!! Sounds like you never let anyone talk you out of anything! NO FEAR!!!!!!
Set a jig up with a 2ft framing square and a couple pieces of angle Grab a good angle finder. Get a Skill saw with a Diablo steel cutting blade for all your miters on your stringers. I've built hundreds of stairs with different styles of treads with Typical nosing distances at 1-0 13/16. You should be able to get them built fairly quick getting your material all cut to length is the time consuming part.
