Week 2 of the 2024 Pantry Challenge is a wrap, and we were so busy! There were some major wins, and one huge disappointment, so join me as I show you what all we had to eat during the beginning of this week.
Meals included homemade muffins, venison fried rice, steak, and deer chili, as well as my son baking cookies, and more!

You are an incredible mom. I’m exhausted watching you. I love how patient and accommodating you are with your children. They are learning life skills in the kitchen and processing deer that will last them a lifetime

When I make mayo, I do about that amount but in a larger jar so it's only about half way up the jar (Pretty sure I use a quart jar). Then when I blend and get to the point of moving the immersion blender up and down, I can move it all the way to the top of the liquid without it making a mess and still get that top layer blended in. Also, it does thicken slightly in the fridge. I'm not sure how much oil you used, but it looked like a lot for that amount of egg. I hope that helps if you try again! The buns look delicious and I loved the video.

Love how you interact with your children esp your baby girl, giving her kitchen experiences, so precious!! ❤❤. I'm not sure but maybe not stir the ingredients (esp the egg) before you add the oil when making mayo?? Once you find that just right mayo recipe, check into fermenting your mayo because it extends the shelf life and improves the texture!

Watching this video while I eat my thrown together super of leftovers! Another fine video! Your children and especially your baby are just precious! I see I'm going to have to start taking notes while watching your videos because there's so much that I'd like to comment or remark about that I forget about most by the time the video is over!😂. One thing though is on those peanut butter cookies! I love those! Several years ago my 2 grown daughters spent the night with Plaintiff and me and the next day I was going to fix this, which l had dine several times before. That day, for whatever reason, I forgot the egg! I didn't realize it until they came out of the oven and cooled some. My daughters and Plaintiff were standing there and the cookies were so soft they didn't want to hold together to well at all! They all had a good laugh about that once I figured out what had happened! But all of the "cookies" were eaten in short order! I'll never forget the egg again! 😂

It was chili week here too! So yummy! I laughed watching your son add the peppers on top, this is my son too for sure!! Never thought of the vinegar addition? Will have to try this! Enjoyed watching your cozy homestead!

Vinegar is something that my grandma used to do? Definitely my mom, if not grandma. We love the little kick that it brings into the dish. He LOVES banana peppers, and loads up his pizzas too. We had an awesome crop last year, so it was great to put some on the shelf. Thanks for watching, and thank you for the kind words!

Oh gosh, I need a nap after that! 😂 As another mentioned, try the mayo in a quart jar, which gives more room to help emulsify the egg/oil. My first few were soup as well. They did thicken a bit after refrigerating, though. You'll get the hang of it; I found I had to back off the oil a bit depending on the size of my pastured egg. Good luck!

You need a good tablespoon of vinegar, 1 good teaspoon of mustard 1/2 tsp salt 1large egg and one cup of oil and proceed like you already did. I have been doing this for over five years. It is perfect

The mayo is a trick! I use about 1C oil to one egg and it comes out a good consistency. For the flavor profile I prefer to use red wine vinegar and Dijon or grain mustard. You should be able to add an egg and re blend that, I bet it will thicken up! A taller wide mouth jar will help too, as it’ll mix a little easier with more room. Good luck next time!

Your hamburger buns were gorgeous, one of my goals is to learn how to make hamburger buns so I can stop buying them from the grocery store. I love seeing how others are tackling this pantry challenge, as this is my second year participating and 1st year watching others aside from Jessica at Three Rivers Homestead and Becky at Acre Homestead!

If your mayo is too thin, try adding another egg to help emulsify it or just chilling it in the fridge.

I have been making my own mayo exclusively for the last 2 years, and knock on wood, have not had a fail. I think the trick is in using a bigger jar than the ingredients require. I only make 1 egg's worth at a time cause we just don't use it enough to double the recipe. I mix mine with a stick blender in a pint and a half jar I got from Hobby Lobby. I feel like its the perfect size because its the diameter of a pint but the height of a quart. A quart jar you have to wiggle the stick blender around to incorporate all the ingredients. And the pint and a half is perfectly round, so no corners for ingredients to get trapped in. Works.Every.Time.

@@thehometownhomestead Its definitely worth doing! And we find it lasts a really long time... like I said, we don't use it often so it lasts months. Must be that the lemon juice and salt serve as natural preservatives. My hubby asked me why the heck they add so many non-essential ingredients to store mayo and I honestly can't tell you. I guess they want that junk to survive a nuclear war!

We have had a major health scare with one of our children. It brought a lot of perspective to the day to day. It’s God’s grace that I have this busy, chaotic crew, and I try to remember that when I want to have 5 minutes of peace. 😆 Every second is a gift, and many families who’ve been where we have would trade my chaos for their calm in a split second. I’m considering using bacon grease, because it’s supposed to be great on the carnivore diet, but I also have avocado oil. I just happen to have a gallon of olive on hand. What do you prefer?
