My girlfriend’s birthday is coming up soon and she said that the one thing she really wants is a Chicago-style deep dish pizza. She’s told me she hasn’t had one in years and that eating one is a religious experience. (I’ve never had one.) There aren’t any restaurants around where I live that make Chicago-style pizzas, so I’ve taken it upon myself to learn how. That journey has led me here. And, after years of watching this channel, I finally made a Babish recipe for the first time today. Let me tell you this pizza is outta-this-world amazing. Just like Babish himself promised, the cheese was cheesy and the sauce was saucy. The flavors meld together into a delectably delicious symphony of sweet and savory seduction. The crust is firm, yet melts in your mouth with a buttery crumble. And don’t even get me started on the cheese! This pizza has made me see the light, made me want to change my ways. I’m now a believer in the almighty Chicago-style deep dish pizza. Thank you, Babish.

As a Chicagoan, what they call "tavern style" is actually more popular here for regular evenings out/ordering in. Going out for deep dish is usually reserved for special occasions like birthday's, graduations, after the prom(they fed us rabbit food, we were hungry af lol).

Thank you for pointing this out. Tavern style even predates deep dish. It's frustrating talking to people in other parts of the US. They always complain to me about "Chicago style"/"deep dish" pizza; and I mention that tavern style exists too; they tilt their head and look at me like I am either liar or from a parallel Earth. To be fair tavern seems to travel to Wisconsin, NW Indiana and a lot of the west suburbs. I think tavern is more representative of what people in Chicago eat. Deep dish seems like a special occasion pizza or a novelty.

@@musicfiction Also, unless people have actually been to Chicago, most people from outside think Pizza Hut-style pan pizza is "deep dish." It doesn't help that many places outside of Chicago advertise "Chicago deep dish" while serving you pan pizza. BJs and Selma's pizza in Orange County, CA are prime examples even though Selma's does sell a "Chicago pie" which is more accurate.

For those curious, this recipe worked for me with 2 regular round cake pans. I didn't change anything. Just cut the dough in half, and put half the sauce on each one.

We made that junk in culinary school and our chef, who was from Italy, kept going on and on about how much better it was than the masterpieces we created here. Well none of us were impressed. Fun fact: Pizza actually predates written history Dishes that are very clearly ancestors to modern pizza have been found in the cultures of Ancient Greece, Armenia, Egypt, and Babylon, as well as the tribes of Israel Though IIRC, the Italians were the first to put cheese on it (also I think the word pizza has Italian roots)

I used to make Detroit-style deep dishes that had sauce atop the cheese, and as long as everything is balanced I like it that way much better. Chicago deep dishes are definitely more than just a novelty, they're excellent.

I lived in California for three years never heard of a California Pizza matter of fact every Pizzeria went to out there literally advertised whether it was New York Chicago or treehugger healthy. I've made this pizza twice now for the fam. John is so right, it is a casserole. In a Minnesota winter it is completely valid and great for every once in a while. It's a great recipe and straightforward method.

FYI from a Chicagoan: deep dish and stuffed pizza are two different things. You made deep dish, while stuffed pizza is a little thicker with thinner crust on the bottom and a thin layer of crust on top with the sauce over that. We also have our own thin style that is always cut in squares.
