BEST TIPS AND IDEAS FOR FREEZING BITTER MELON
In this video my wife shows how to prepare bitter melon for storing in the freezer. You will see her trick of using a spoon to scrape the pulpy material out of the bitter melon half before she cuts it into 1/4 inch pieces.
This method is very easy, although, if you wanted to you could blanch the bitter melon slices.
The vacuum bags help to reduce freezer burn.

Got some bitter melon vines in my yard that produces fruit like crazy. They don't last long in the fridge while freezing them form crystals that make them unpalatable. Starting giving them away to neighbors who would take them. After reading many suggestions on preserving, I find your method the simplest and easiest so I just ordered vacuum bags and pump. Hope I can save some of the fruit for off-season.

I did not know the seeds were orange/red. It's so pretty!! The bitter melon looks so pretty too.

Do you wash them first, or do you wait until time to use it before washing them? Also about how long will they keep in the freezer using this method? Looking forward, James

For the last two years she has been battling cancer and she is under going treatments last week, this week and next week. I have never heard of a bitter melon, or seen one before. Where do you get these and/or growing them. What do they taste like. It really did have some pretty seeds

Hello Teresa, Bitter melon is not a melon like you and I would think. It truly is bitter, although, some say you can blanch it and remove some of the bitterness. It originally came from India or China, my wife likes it and uses it in cooking. Although the seeds look red, that is just a soft covering, the seeds are tan to brown in color. We have been growing it for years and we save the seeds from this years crop to plant next year. I tell you, if you didn't grow up eating it, you won't like it, that is not to say that you can't acquire a taste for it though. What do they rase like: Have you ever eaten a dandelion leaf, it is somewhat like that only more bitter. Thanks for commenting on this video. OAG

After seeing this video, instead of buying a chamber vacuum sealer at $400, I'm going to look for a Ziploc vacuum sealer and bags for I'm sure a lot cheaper! I, too, and wanting to freeze my bitter melon crop.

Can you still use them for juicing after you freeze them?

Hi Cindy, yes you can. And you can also extract the juice and freeze it, we have done that before. One word of caution on the juice, you really should be monitoring your blood sugar as the juice will drop it and you don't want it to get too low. Thanks for commenting on this video. OAG

Hello and welcome to my videos. My first thought is that you planted them much too early. Bitter melon is a hot weather crop. Next thought is: What size pot do you have them growing in? My next thought is: What kind of lights are you trying to grow them under? And last, what kind and how much fertilizer are you giving them? OAG

I know it’s way too early but I got that itchy feelings of growing something you know how that is😊 They’re only an inch tall and in regular soil for seedlings and as for fertilizer? Light diluted fish liquid and under makeshift hanging lights? Does that answer your questions? All the above might seem funny but I’m new to gardening. Thanks again for all you do Mr Charles. I would really go slow on any fertilizer, because fertilizer will make the plant grow faster and right now you want the plant to grow slow or just sit for a while. What size of pot do you have them in?

Thank you for posting the videos on bitter melon! I love your idea of building the trellis with cattle panel. And how to clean and freeze the melon. I showed this video to my mom who is Chinese. She was so impressed at how healthy the plants looked! I can’t wait to grow some for her this season!

Anyone know which variety of bitter melon this is? I bought seed starts from an Indian guy, in NE Tn & its growing well but not very bitter, which I like but my dad likes the bitter version we had in Hawaii but I don’t know which variety it is to buy seeds. The one i have is light green, white seeds, turns orange when ripening.

Yes, my Instant Pot is really great, last night I put 3 pork chops and 1 cup to chicken broth in the pot, went to take a shower and when I returned the chops were ready, I used some of the broth in the pot to make a gravy, served over mashed potatoes and english peas, great supper. Thats some big seeds! Wife is Japanese, Okinawan? Her speech, "neh", and Japanese cutting cleaver .... Never had bitter melon, so ... cucumber crunchy and taste ?, blah frim melon green rind bitter, no-sweet texture, or a firmer texture than eggplant? Any options blanching before putting into vakpaks, or parboiling, then ready to serve-and-eat? How is texture? Can you use a kitchen mandolin for doing all the slice-ups?

Hello John, Yes, wife is from Okinawa. We been married 52 years this Oct. Bitter melon is truly bitter, somewhat like dandelion leaves only more bitter. It is a little firmer than a cucumber. You could blanch it, some say that removes some of the bitterness. Yep, a mandolin would work, my wife uses one some time, but for this she likes the big knife. You doing okay these days? OAG

Hello DW, I would rate them off your scale, they are bitter to 15. That is why I tell folks that unless you grew up eating bitter melon you probably wouldn't like the taste. But, I guess it could become an acquired taste. Thanks for asking this question because many folks have the same question. OAG

I’m currently based in Guyana. Bitter Melon (Karelia around here) is a staple in my household. Just planted my first plants, sorry I didn’t see your planting video first. Will definitely use that method for the next crop. Thank you for passing on your expertise.

This is what I was looking for. I have two questions, though. Are the red seeds viable? Will they sprout? And is the yellow pulp what gives the fruit its bitter taste? By the way, I vacuum seal too. It's the way to go!

Hi Katie, How you been doing? The red on the seeds is just a pulpy coating. The seeds are brown and with a hard outer shell. Yes, the red seeds are viable, the white seeds are not. I will give you some seeds when you return home. Yes, vacuum sealing helps to prevent freezer burn. Thanks for watching this video. OAG

First I am not a doctor so anything I say is just my own thoughts and you would have to decide for your self. The bitter melon (you can buy it at Oriental Food stores) is reported to reduce blood pressure (you can research it to learn more). Arthritis is an inflammation issue, changing one's diet, eliminating all grain products, is reported to help. Gout is a Uric acid issue, reducing all foods of the night shade vegetables is reported to help, nightshades vegetables are tomatoes, peppers, potatoes and egg plant. Fatty liver and over weight go together, cut out all the starchy vegetables such as potatoes, corn and pasta, and again cut out all grain foods. Just my thoughts. I cut out all grains and I lost 20 pounds in 2 months. The bottom line is do some research on Google and you will find a lot of helpful information. OAG

My wife slices the bitter melon length wise and then scraps out the pulp with a spoon. Then she slices the bitter melon cross ways into about 1/4 inch slices and puts it in a freezer Zip Loc bag and then into the freezer. OAG

Hi Carrie, As to being up too early, My internet data plan allows me limited during the day data use, but between the hours of 2 am and 7 am I have more data allowance, So, I prepare my videos and when I wake up in the night to go to the bathroom, I start a video uploading. The vacuum sealer, I bought at Walmart a long time ago. Last year I con't find the replacement bags anywhere so I ordered them from online. If you aren't able to find them let me know and I'll help. Are you doing okay these days? OAG

Hi Mary, actually it is a very vegetable for your health. Those cultures that grow and eat this melon really love it. The Okinawa (part of Japan) people eat it a lot and they are some of the longest living people on earth. So, it truly is a good food for us. OAG

My wife is from Okinawa and bitter melon or as they call it, Goya, is a staple in their diet. Usually stir fried with pork and tofu. Very healthy for you. OAG

Hi there I am in Houston Texas just now start eating Bitter Melon again said it would be good for diabetes .. i just bought some today from chinatown and making a soup with tofu polk & bitter melon and just cook me some rice .. I am thinking about growing them this spring but i am live in apartment but I will try thank you for sharing your hard work
