It's normal to dislike certain foods that we are unfamiliar with, and you explain it well. Unlike many people, especially in some nations you are familiar with, they use insulting or derogatory terms for those who cook or someone who eats even tells the fruit with weird hairs that shouldn't be on earth. The more those people spoke, the more they showed others their level of intelligence.
I live & work in the US, and I have come across a guy who kept saying that eating rice is like eating maggots, every time he comes into my office to pick up the loading cards for the warehouse. My former boss was so embarrassed for this guy's ignorance, because they both were the 'Good ol' boys" from the south who didn't travel much, but my former boss was more knowledgeable, food-wise, so, he kept chided this ignorant guy to stop saying insulting words, but the guy didn't stop. One day, I have had it when he caught me on a bad day, so, when he hurled the insulting words, I threw away all of my manners that we should respect the elders, and I just told him that he should try eating rice and stop eating whatever he has been eating, because his breath was stinking up to high heaven, that I could smell it across the room! 🤬😡🤬 He was shocked and looking so sheepish after that. My former boss lets out the loudest chuckles. 🤣. Needless to say, that fool NEVER uttered another insulting word to me again. As for Josh, I don't think he meant any harm. A little buzz from beer made the choice of word seemed offensive. I would prefer the words "chicken butt" because it's more cute and playful. No bad intentions on his part. 😊. The Vendor's sign has the word ASS on it, for heaven's sake.
In Thailand, it's not different from other places. There are some foods that are strange even to Thai people. There are some foods that even Thai people don't like or have never eaten. As for chicken ass, I'm not very impressed with it. Because of its softness, I can eat it but it needs to be grilled quite dry. As for scorpions, even though I am Thai myself, they are considered strange food here and I have never eaten them myself. I'm not sure if you know Thai people don't eat insects regularly. It's a novelty item and currently exists in markets with more foreign tourists than in the general community.

The chicken's ass is also known as the POPE'S NOSE. The technical terminology is PYGOSTYLE. It's a heart-shaped part of the chicken where the tail feathers are attached.
As a Thai person, I never thought I would be willing to try eating bugs or some kind of poisonous creature, but after seeing foreigners eat them, I myself would be willing to give it a try! 😁
