I have LED light strips being used in other places. They are nice and easy to install, but I personally feel that the color's (even white) slowly fade over time. Depending on which stips you get, they can last a few years, or less than a year. For under cabinet in the kitchen, I personally prefer a wired light in some type of housing (meaning now strips). The light inside the housing can be LED at that point.
Thanks for the comments. Yes, I read in the book that if the timer is on, the lights auto-shut off at the 3 hours mark. The connection on the light is female, the cables are male. The cable connector they provide is female on both sides. It is designed to allow you to connect multiple wires together to make the length longer. Think of it as a cable extender. So if you only had a 6 foot and 3 foot cable left (just using random sizes) and you needed to go around 8 - 9 feet between lights, you could use the connector between the 6 foot and the 3 foot wire to make the wire 9 feet long. If you just want to two light bars under a double cabinet, you don't really need the connector/extender, you could just go light bar, 3 inch cable and then light bar. The other end of one of the light bars would need to connect back to the power.
