Recipe
Ingredients
2 x chicken Breast
25g/1oz Butter
1 Qty Rub
1 Lemon to serve
The Rub
1 tsp each of:-
Salt
White pepper
Black pepper
Garlic Powder
Onion Powder
Smoked Paprika
Sweet Paprika
Cayenne
Ground Coriander
Ground Ginger
Dried Oregano
Dried Thyme
Mix well and add to a shaker or a bowl
Method:
Butterfly the Chicken
Smother with the rub
Add to a smoking cast iron skillet and sear before adding the butter.
Basting and flipping regularly until perfectly cooked.
Rest for a few minutes before serving.
