Note that he is using Key Limes. Key Limes have a lot less pith (the white part of the peel). You can use Persian limes, but you want discard the pith prior to blending. Zest them and peel the pith away from the fruit. Add the zest and the meat of the fruit (no pith) to the blender and follow the recipe from there. I have never seen this made with coconut water, but will be giving it a try.

I believe the name Limonada Suiça comes from the fact that back in the day Brazil imported most of its sweetened condensed milk from Switzerland through Nestle, and the can had a typical pastoral scene with a Swiss milkmaid on the wrapper.

I make a version of this by zesting the skin first, then peel and blend the limes. I really dislike bitter things, so this cuts down on that flavor massively.

Excellent. I followed a shaved fruit ice video I saw online, but wasn't digging the lime one I made. But since I had already put some sweetened condensed milk on it, I figured I'd just stick it in the freezer until I figure out what to do with it. Looks like I found it.

Since you don't seem to need to completely puree it, you can probably just use a food processor.

@@BlackTigr that's an interesting idea. Maybe I just need to be careful not to fill it up too much to make a mess? I made butter in my food processor (from cream) and that got messy.

I've this like 5 times in the past and it always came out too bitter and nasty....a couple sips and then it would get dumped down the drain. Everyone says Brazilian Limeade is so good but I wouldn't even feed mine to my dog. I think my problem is the over-blending as I was blending the limes until there were no visible chunks. It looked pretty but taste no gouda. Sweetened condensed coconut milk? I never knew that even existed. I will give this one a try since the technique in this recipe is more refined. If I screw this one up, no more Brazilian Limeade for me.

You’re definitely over blending. Just a few half second pulses.

If you tend to overblend, you can go the route of zesting the limes carefully (avoid getting the white pith), then take off the remaining pith before cutting up the lime fruit. If you use the zest and fruit alone, you can pretty much blend to your heart's content and bitterness won't be an issue!

Quick Update: Success !!! I made this again following this recipe to the "t" and it came out great. Just like a "light" key lime pie. Thanks for the tips everyone. This one is a keeper.

"I haven't heard that before." Seriously? Key Lime Pie was literally my first thought when he listed the ingredients. $100 pitcher ad disguised as a recipe. All that said, it sounds delicious, and I have the ingredients. I'll be making it.
