Love the chord subs. The sound is so much richer that way. I tend to use G7b9 where you use G7#5, but the #5 does feel, as you say, more melancholy.

It has some great chords for keyboard and Guitar and the bass line is superb. I like to record this by changing the key half way through otherwise it gets a bit boring.

Joe Pass says to forget about the ii chord in a ii-V7-I when improvising.

Yes, that's a nice way to approach it. You can also forget the V chord and just play ii - Wes did that a lot.
