Blueberry Cheesecake Cinnamon Rolls

These cinnamon rolls are made using active sourdough starter. It was inspired by the Clever Carrot’s Cinnamon Roll recipe.
Dough:
160g milk (I used 2%)
28g unsalted butter, melted
1 large egg
100g active starter
24g granulated sugar
150g bread flour
150g AP flour
5g fine sea salt
butter or cooking spray for coating bowl
2-4 Tbsp Heavy cream (add right before baking)
Filling:
2 Tbsp melted butter
No bake cheesecake filling
Blueberry preserves or jam
Topping:
No bake cheesecake filling
Directions: (modified from the Clever Carrot, amazing recipe, go check it out!)
Combine melted butter and milk in a bowl, set aside to cool.
Add the egg, sourdough starter, and sugar to the bowl of a stand mixer with paddle attachment. Mix to combine. With the machine running add the milk/butter mixture. Add the flour and salt. Continue mixing until a rough, sticky dough forms (1-2 min). Scrape down the sides and then cover with a damp towel to rest for 30 min.
After dough has rested, switch to dough hook. Knead on medium for 6-8 minutes, adding flour if your dough is too sticky. The dough will be soft and fall off the hook easily.
Transfer dough to a buttered bowl, and cover with plastic wrap to begin bulk ferment. Do 1 set of stretch and folds after 1 hour, and then allow it to rise overnight or until doubled in size.
Roll the dough out to a 16”x12” approximate rectangle. Brush the 2Tbsp melted butter over the dough leaving 1/2” on all sides. Then spread out the cheesecake filling (measure with your heart, but the more you out the harder it is to roll. Leave 1/2” border on all sides). Then spread on the blurry jam (again, measuring with your heart). Roll into a log, and slice into 2” sections (to make 8 rolls).
Place into parchment lined pie plate, and cover, allowing to rest 1-2 hours for the second rise.
Preheat oven to 350°. Pour heavy cream over rolls right before you put them in the oven.
Bake at 350°F for 35-40 minutes (check at 30 min mark). They will be golden brown on top when done. Remove from oven and allow to rest for 15 minutes before removing from pan. Top with cheesecake filling and fresh berries if desired. Happy Baking!
