I've already made this recipe twice, it's my favorite Boeuf Bourguignon version (and im French!). Instead of putting it in the oven, i prepare it the day before and let it cook slowly for 3 hours plus 1 more hour on the next day. Delicious!

My mother and grandma made those dumplings all the time. Grandma was from what later was Czechoslovakia. Those were real poor people's food but delicious. She'd fry slices of salt pork to crisp, make a gravy in some of the fat and milk and dill, and black pepper. Or sometimes make a tomato gravy with tomato juice. She had a diner in the 1920s to 1930s. I don't know the language but the name sounded like "shishkey oh mahtshka". Any Czech out there?

Tip: in a small place where small mess = big mess it’s a good idea to dust meat in flour by putting it all in a polythene bag and giving it a good shake/rub. At the end you just chuck the bag in the bin - no need to deal with damp bits of flour all over the place.

For any novices out there (it's ok, we've all been there) , they forgot to show you a very important step. You need to cook out the wine and burn off the alcohol. Bring the liquid to a boil, then turn the heat down to medium, and cook until the alcohol has been cooked out. If you pour the wine in just before you put your pot into the oven the temperature will never get high enough to burn off the alcohol and your sauce will taste like raw alcohol. Other than that, its a great recipe. The dumplings are a nice touch.

That is false, this burn off alcohol stuff is a myth. The wine will cook itself out as the beef cooks in the oven or stove top. After simmering for hours it will no longer have that strong raw alcohol taste, in fact it will sweeten and meld together with all the other flavours in the liquid.

I was going to say she forgot to add mushrooms... but she added them part way through the cooking... I tend to do the same. But a really good trick for mushrooms is to fry them in a pan with a lid for 3 minutes and not much oil... it draws all the water out of the mushrooms before adding them to a stew. For French style stews including things like chicken chasseur... using the little button mushrooms that you don't have to slice but keep whole works really well.

Love her! New favorite cooking show. Her recipe online incorrectly says tomato "puree" instead of "paste." Also, since other reviewers said the dumplings were bland, so I added grated Parmesan, which was delicious!

The dumplings are essentially the same recipe as Roasted Semmelknödel, but minus the bath in hot water and not mixed with scrambled eggs and chives. I guess if they taste good with beef goulash, they probably taste good with bourguignon as well. As Rachel Khoo is half-Austrian, she surely knows all this already.

You can use one or 2anchovies or some anchovy paste and or 5 or so shitake mushrooms. Make sure you cook them in the pan first like the bacon step in some oil or butter and that will give similar base smoky flavour and will not be fishy either. 🙂

Hello there, if you are still interested in the old-white bowl or have not yet purchased it, you might be able to buy something similar from Sainsbury's. They stocked it a couple if months ago and if you are lucky, go online or visit a large stock, you might be able to buy it. Hope this helps.

nothing worse than to have to listen to the whine of a half grown female cook ; after a while it gets on a listener 's nerve . There must be a better speaker available to do shows like this and relegate the squeaky mice to restaurant duty , service to customers minus minie mouse entertainment .
