Wow, I wish I had all day to just sit and watch these videos. I grew up on the Blurred Lines of Chinatown and the South End of Boston Mass. I love it there. My mother bought fish heads all the time because they were a dime-a-dozen 45 years ago. She did not simmer them for very long but wow was it delicious. I believe the key to making non fishy fish broth is to make sure the fish is freshly caught from the pier. Old fish is going to stink from the head like politicians and bureaucrats. LOL Now I understand how to handle fish in making broth because as a child I didn't think much of it. Thank you for your video I'll try to finish it up later.

DUDE! Do you have ANY idea how great your video is? It's EXCELLENT. I am a foodie and a home cook and tonight alone I tried to find ANY worthy video on BONE broths. There is so much crap out there. You are easy to listen to, natural, and most of all - you know your shit! And you could propably be my son. I don't give out compliments easily, so enjoy this one. I just may subscribe.....just may....

All these broth-base soups and congees are so simple because they are home-style meal items, not the dishes one get from a Chinese or Asian restaurant. We eat these everyday as a part of regular meals, therefore the preparation has to be simple and quick, or else we would be spending the whole day everyday cooking our daily meals.

Chinese use ginger, pepper and chinese parsley to avoid fishy smell. Always drink when it is still hot.

An old neighbor when I was a kid used to make fish head stew. Her parents were former slaves. She cooked chicken feet too. Poor folk and slave fare in the US, but it sustained and kept folks strong and healthy. Not like now. I have always lived the juices when I baked fish.

I watched this whole video and loved it! Especially the part about fish broth and it being good for the thyroid. I never knew that and I suffer from hypothyroidism so it's definitely something I want to try making. I wish I could just sit and pick your brain but alas I am in VA. Do you know or are apart of any organization of nutritionalists like yourself that could help me find someone near me to talk to? I'm trying to better myself and my diet. I'm tired of not feeling well and just settling for the body/health I have.

I use oxtail, cut femur with marrow, chopped cow feet chopped pig feet and chicken feet, I soak then in clean cold water and 2 cups of apple cider vinegar.slowly bring temp up and then skim the surface and the trash is gone after that, and then I bring up the temp until I get a simmer until everything that can breaks down and man a lot does. I do use garlic cumin black seed (nigellas sativa) regular cumin, star anise 2, chopped fennel celery leaks and carrots. bay leaf, turmeric, red pepper flakes and black peppercorns. I add salt in the end to taste then this is my drink. I no longer drink sodas or drinks, just this broth but more like a gelatin that I throw into hot water. I am now full carnivore and so far dropped 60 pounds and feel so much better. still have a long way to go but its worth the time

With meat laid out on the tables in fromt of the public, for sale, how do they keep it fresh. Doesn't it lay there, in the open air, or quite a while?

the lady must be a Muslim by looking at her head scarf. I couldnt be pork she was cooking. It must be beef and bones. Muslims are forbidden to eat pork. Appreciate if you could check just to be sure you are accurate in your information.

Uggghh! Those self-righteous, hypocritical fools ... they trash us omnivores for eating animals and animal products, yet it is okay for them to kill plants as if the plants are less of a life than the animals! Just because plants are not mobile and cannot scream doesn't mean they don't mind being cut down to be served as someone's food. I would deliberately spite them by sucking on yummy chicken feet (Phoenix Claws as a Chinese dish is named) in front of their faces, ha!

How ignorant to equate plants to animals. If I cut off a branch or stem of a plant, which is called pruning and if they don’t get pruned the branch or stem dies. Why don’t you try and cut off your arm, hand or even a finger and see if it grows back? Also, try and do it without screaming. Animals like humans don’t come back when you kill/slaughter them. One thing you should also know is; plants are omnivores, they live on - dead animals, insects as well as dead vegetation. Vegans abhor causing suffering or killing of any kind. You call them “Those self-righteous, hypocritical fools”, you are exactly that yourself, judging how others wish to live their lives, you should be ashamed, but my guess is you don’t have it in you.

+Diann1 I had a nephew doing his premed studies. He got very sick because he was vegan.If he stayed vegan he would have to take 2 vitamin b shots a week for life.He is no longer vegan though he won't eat meat unless it's hunted or he checks out how it's raised.I worked in a slaughterhouse. about 20 years ago.I will not eat factory raised or slaughtered meat.Almost went vegetatian from what I saw

mary CBS news jane - My comment was aimed at ExtraordinaryLiving and his reference to animals screaming when killed; not about the merits of veganism. My dogs get a species appropriate diet (which they can’t get from commercial dog food) of organic chicken plus giblets, neck and feet with non-starch vegetables, so they get all the benefits from the bones as well, “bone broth stew”, cooked in a pressure cooker. I agree with your nephew’s ethics on sourcing where his meat comes from. I personally will not eat meat, or by-products from any animal that suckles their young, as humans do.

Hello, I tried to make bone broth today and I had a weird reaction to it . My head started to feel tight, brain fog and anxiety. What could be the problem? The bones were chicken, not grass-fed but, no hormones or antibiotics.

i apologize for the rudeness of the other fella in this reply....it has been said that by boiling bones at a high temp (like a hard rolling boil) increases/concentrates the free glutamate in the broth making it react in the brain like msg. if you've heard of "chinese restaurant syndrome", you'll find that your symptoms match. this speaker goes into more detail about it if you are curious, ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-u54kzeqflLc.html try to cook low and slow like a pot roast and see if that helps. i hope you feel better, i know this was a while ago...don't give up on good broth. blessings

Histamine reaction. It prob means you have a leaky gut. Make your broth mild at first( by boiling chicken wings for only 2 hours and only drink one cup. You will heal your gut like this. But take it slowly.

If you use bones 🦴 from chicken that are not pasture raised and organic, you possibly ingested pesticides/antibiotics - which could cause this reaction!! Dude!!! Love your video. You have a lot of good points. But please get all your facts straight. All chefs (like myself) that went to culinary school know the difference between a broth and a stock. A stock is made from bones, carcasses. A broth is made from boneless meat. So the bone broths that we both like so much are technically stocks. The reason why this delicious dish is called a broth instead stead of stock is because broths are both used as a dish and an ingredient. Stocks are just used as as an ingredient. You won't find stocks on a menu. But they will be listed as one of the ingredients of a dish. Still many restaurants are secretly serving stocks (which are naturally more flavorful) as stocks. that is probably where the confusion started. Shame on them.

Don't preach hitoshi doth to the choir. If we want to call what is listed here a broth, we can do that. This is an up-coming science for Americans. We did away stupidly with stock pots which gave us a regular item in our stoves in the 1930s and 1940s. Then TV came about, we found out how sick we were because pharmaceuticals figured out how stupid we were, and we did away with making stock on the stove, and no more did our stoves have any special spot designed specifically for making stock, which we call broth.
