We were administered via Mexico though, so we are more similar to Mexicans than Spaniards (like we have our own version of tamales and Catholics here celebrate the feast of the dead like crazy)

+Quang Tran, I have a recommendation in case you do Boodle Fight 2: Instead (or heck on top of) the Chicharon you can also add Lechon Kawali or grilled Pork Belly (marinaded in Soy Sauce, Garlic, Seven-Up before grilling), salad of green mangoes/tomatoes/salted egg (vinaigrette of Shrimp Paste, vinegar, oil, a touch of sugar), fried Tilapia, grilled Squid, and of course Lumpia. Okay I had to redo this...A Boodle Fight was started as Quang said by the military. Regular practice is for officers and enlisted men eat separately. The Boodle Fight was started in the Philippine Military Academy as a means to break down the barrier between enlisted and officers to foster camaraderie. So they put food on the table and both officers and recruits eat without concern for rank. It says "in the end, we in the military are all brothers and sisters and shed blood for a common cause." As for the Philippines: It was colonized by the Spanish for 300+ years, the British showed up for 3 years, the Americans, and of course the Japanese. It also has a VERY BIG Vietnamese community when those who fled the war stayed and became part of the community.

Si sig was originally made from left over food tossed out by the US navy during ww2 the local people would take it clean it then re cook it creating the first rendition of what is known today as si sig

Me and my friends have a different way. we put the ulam(dishes - usually 3 to 5 variation) in the middle, then rice around it. we never put the meals on top, it usually ruin the taste. so if you eat slow your rice in front of you will be grabbed by someone then the fun fight will begin. we usually prepare very spicy meal like duck in coconut milk, tocino for something sweet and spicy grilled squid. Spicy food because it makes it harder for some to eat making you eat slow. for us too much food makes it boring, food should be enough to fill everyone stomach.
