Shirt grain rices are better for dosas as they have stickier starch (this is grandma wisdom don't quote me) which makes the batter more fluffy. You gotta use a granite stone grinder tho. Also let your batter ferment for 4-5 days in the fridge after letting it ferment 8 hours outside for better flavor Of course our rooms are hotter

Correct. Stone grinding does something different to the grain in the way it smashes the grains and circulates the batter.

Luciano L S huh? No, not at all. I think he just wanted Sohla to be proud of him for getting basmati rice, which he thought was the exact rice for the recipe since it’s also partly an Indian dish. But it wasn’t the exact dosa rice she had so I think he was disappointed and hid it when she didn’t directly acknowledge it.

I'm a South Indian and we eat dosa almost every day. It's a staple food here. Soo happy to see this on my favourite BA channel 😍 I'll share a few pointers 1. Here's how the timeline works soak the dal, rice, Fenugreek and small cup of poha(flattened rice) before breakfast in the morning. Let it soak all day. Grind it (without the salt) before you go to sleep. Keep it in a warm place and next day morning it's ready to cook. 2. So the key is to NOT add the salt when you're blending which will make the batter go tangy, watery and spoils the taste. You have to add the salt few minutes before you cook and mix. It's not supposed to be too tangy. There're million permutations and combinations of dosas you can make and eat with number of chutneys and currys, stir frys etc 3. Season your skillets otherwise it won't come off. When you're cooking you can add any vegetable oil instead of ghee or a mixture of both and sprinkle some spice power. What we use is called chutney pudi or gun powder you can also sprinkle peri peri powder, taco seasoning, Cajun spice etc. Grate some cheese on top and eat. It tastes like heaven ❤️

@@kirosic1 yea except sohla knows everything about every cuisine lol Priya is an excellent example of a by-the-book/traditional/mom's-way type of indian chef while most of the other chefs like Molly, Chris, Brad, Claire are more experienced in european/western foods and but I agree these chefs certainly have their areas of expertise. Sohla on the otherhand can easily mix asian, south asian, middle eastern, and western flavors together so I'd say her skills are much more diverse(like her background is too lol). Most chefs don't have that type of range, so we should give credit to Sohla where its due. And of course she has the most experience(worked in 2 michelin star restaurant, started her own restaurant, 15 years of experience, etc etc) so it would make sense that she's such an all rounder compared to the other chefs.

This is easily my fav BA video ever. I literally laughed out loud throughout. Brad + Sohla is such a winning combination; that’s the best sort of fermentation, not just food, but lots of joy. Sohla: the ever-encouraging and patient teacher, always attuned and improvising. Brad the hyperactive student, very curious and excited. Makes food prep and cooking fun and less intimidating. Sending lots of love to Team BA!

I would love to see Its alive take on a fermented cake we have in Spain called " El Bizcocho de las carmelitas descalzas" or the cake of the Discalced Carmelitas. It's tradionally made by nuns in convents and it takes around 10 days, it has a feeding schedule much like sourdough, except it has sugar and milk. It's very tasty aswell
