I made this as my second fermentation project and was so impressed with the results. Once I was happy with the level of funk, I used a touch of cane sugar to tone down the spice prior to refrigeration. So easy to make and the flavor is out of this world. Thanks, Brad!

Did I miss it or did Brad not crush that garlic and get that allicin going before or after the cast iron??? I've heard somewhere before that allicin is like a two-part glue or epoxy...and is what's very good for you in garlic (I believe...)

Wouldn’t the complex bacteria required for fermentation to occur be killed by roasting the ingredients? This is EXTREMELY DANGEROUS to encourage people to do this without proper understanding of botulism and how bacteria works in the fermentation process. You can ferment roasted food but you need to incorporate a starter to kick start the ferment.
