I really enjoy Brad and his content as ''Its alive'' is one of my favourite show! But pleaaaaase Bon Appétit, bring back the old editing style!! i think the editing is different since now the show is available via streaming services to try and make the show appeasable for all audiences and not just for hardcore fans

Nixtamalization- also frees up the nutrients of corn, primarily niacin. *If* contaminated by mold, it also purges most of the possible toxins. Corn treated with lime is called “nixtamal” (neeshtamal) derived from the Aztec name. Tamalli (tamal) means dough, from which we get “tamale”

He uses calcium oxide. Calcium Oxide (quicklime) is added to water, hydrates to Calcium Hydroxide (slaked lime). Calcium Oxide is derived from cooking limestone. You can also use wood ashes which are mildly basic (pH above 7.0) to nixtamalize corn.

Yes and no, Suerte's process is obviously more for large yields whereas a regular person wouldnt need as much to be able to make a few tortillas. A mortar and pestle can be used to mill the corn, and after that it will be the same process as making dough. You could also just buy Corn Flour and that will still yield very good tortillas. Hopefully this helps.
