鹵水豬大腸
材料:
急凍豬大腸2磅
調味料:
蠔油1湯匙
生抽2湯匙
老抽1湯匙
鹽少許
冰糖1大粒(約100克)
米油/紹興酒100毫升
薑1舊(去皮)
蔥2條(切段)
花椒少許
八角少許
香葉2片
陳皮1角
甘草1塊
清潔豬大豬用:
白醋100毫升
生粉100克
處理:
1. 急凍豬大腸,清水解凍。
2. 豬大腸解凍後,倒去水分,加入麪粉或生粉50克及白醋50毫升,去除油膩及黏液,一方面可以癖除腥臭味,另一方面還可以有漂白作用,乸2分鐘,清水沖洗乾淨,擎乾水。
3. 豬大腸,打橫1開3。
4. 大火煲滾1煲水,放豬大腸,出水至起白泡,夾起放入清水內浸3分鐘,倒去水分。
5. 反轉豬大腸,由外反內,除去白色肥膏。
6. 豬大腸,加入生粉及白醋,乸2~3分鐘,除去異味。
7. 豬大腸,由內反外,清水沖洗乾淨。
8. 大火煲滾1煲水,放豬大腸出水1分鐘,清水沖洗乾淨,擎乾水。
烹調:
1. 放豬大腸入煲內。
2. 放花椒八角(已洗淨)及所有調味料,加入煲內。
3. 加入蔥段,及已拍鬆的薑。
4. 加入滾水,蓋過豬大腸,大火滾起,轉中火炆45分鐘。
5. 用筷子試一試是否可以容易穿過豬大腸,如尚未夠腍,冚蓋,再炆多15分鐘。
6. 豬大腸已炆好,夾上碟,切開一件件。
7. 放香葉,及淋濃汁在豬大腸上面。
8. 完成,可享用。
Braised pork large intestines with Chinese marinade
Ingredients:
Frozen pork large intestines 2 lbs
Seasoning:
Oyster sauce 1 tbsp
Light soya sauce 2 tbsp
Dark soya sauce 1 tbsp
Salt little
Rock sugar 1 big cube (about 100g)
Rice/Shaoxing wine 100ml
Ginger 1 No. (Already get peeled)
Green onion 2 Nos. (Cut in lengths)
Sichuan peppercorn little
Star anise little
Bay leaves 2 pcs
Dried orange peel 1 pc
Licorice 1 pc
For the purpose of cleaning pork intestines:
White vinegar 100ml
Tapioca starch 100g
Preparation:
1. Frozen pork large intestines, defrost in tap water.
2. Pork intestines have been defrosted, pour away water. Add in rice flour or tapioca starch 50g and white vinegar 50ml, to remove fat and sticky thing. On one side, it can eliminate the unpleasant smells, on the other side, bleaching effect can be obtained. Season for 2 minutes. Rinse thoroughly. Drain.
3. Pork large intestines, divide each one into 3 pieces horizontally.
4. Heat up a pot of water at high flame, put pork intestines. Boil it until white bubbles coming up. Pick them up and soak in tap water for 3 minutes. Pour away water.
5. Pork intestines, pull inside out. Remove the white fat.
6. Pork intestines, add in tapioca starch and white vinegar, season for 2~3 minutes to remove unpleasant smells.
7. Pork intestines, pull inside out. Rinse thoroughly.
8. Heat up a pot of water at high flame. Soak the pork intestines for a minute. Rinse thoroughly. Drain.
Steps:
1. Put pork intestines in pot.
2. Put Sichuan peppercorn, star anise (rinsed) and all seasoning in pot.
3. Add in green onion (already cut in lengths) and ginger (already beat well).
4. Add in boiled~up water just covering up the pork. Heat up at high flame. Turn to medium flame and braise for 45 minutes.
5. Use a pair of chopsticks to check if the pork can be pinched through easily. If not, just cover up the pot, braise for 15 minutes more.
6. Pork large intestines has been braised well, put on plate. Cut in pieces.
7. Put bay leaves, and pour the sauce on top of pork.
8. Complete. Serve.
