My great-grandmother taught me how to make these as a kid! She didn't call them that, tho. She called them Creme Brulee donuts. We made them 2 different ways- 1- two layers of filling in ours is a mix of vanilla custard and homemade vanilla bean frosting. Custard base, frosting, then custard and frosting. The 2 way - mix both the custard and frosting together, combining it fully, then put that mixture in. I liked the first kind my mom liked the 2nd. I was lucky to grow up with my great-grandmother, and she taught me how to cook from scratch. Our family came here from France (on my mom's side, I'm 3rd gen). My dads side came from Ireland, Im 2nd gen on his side. Sadly, I lost my great-grandmother when I was 9. Only a few years later, my dad passed when I was 11. My mom just passed away on February 11th of this year, less than two weeks before my great grandmothers birthday. My son is 3, and I am teaching him everything they taught me.

Meh, " burned sugar" is a flavor in many countries but in USA we like a bit more variety. Put vanilla extract in the sugar next time or hazelnut extract.
sugar part is always the hardest, it's super specific. Cook for too short and the sugar will not harden, if you take it off the heat abit too soon the shell will harden but when you eat it, it will stick to your teeth like glue. Cook too long and you've burnt it. Still tryin to master turning sugar into shell/hard candy
