Easy Oat Breakfast Bars
1 cup melted butter(2 sticks)
¾ cup brown sugar
2 eggs
1 tsp vanilla
½ tsp baking soda
½ tsp salt
2 cups old fashioned oats
2 cups All Purpose Flour
Stir together melted butter and brown sugar. Mix in eggs and vanilla until well incorporated. Add in baking soda, salt, oats and flour, and mix well. Spread into a 9x13 baking dish and bake in a 350° oven for 20-25 minutes until golden brown. Cool completely and cut into bars. These freeze very well.
Note: To add jam, spoon several dollops on top of uncooked bars and swirl into batter. I use about ¾ cup of jam.
