Looked to me like it was sandpaper. To rough the sole edges so when he painted it the paint would stick better to the rough surface and also to get rid of the old paint on the sole. I believe it's 150 grit sandpaper I'm honestly just guessing though.
Why am I led to believe that shoe polishers are secret gentleman, or themselves gentleman servants to gentleman gentlemen. I know the English were the first to start this trend of having laborers dressed in suits doing menial work. Why the Asians copy this is beyond me. Whenever I see these videos it makes me die a little inside. I want to see a real polisher teaches us how to polish shoes.
