Easily make a vegetarian version without ham. Put your own spin on this egg in pepper miracle by swapping out the other ingredients for anything from smoked salmon and chives to mushrooms and bacon.
BRILLIANT BRUNCH PEPPERS
INGREDIENTS
• 3 red, yellow, or orange bell peppers, cored and seeded
• olive oil
• 6 eggs
• 3 green onions, sliced
• 1 tomato, cored and roughly diced
• cooked ham, cubed
• fresh dill, chopped
• salt and pepper to taste
• 1/2 cup hard melting cheese, grated
INSTRUCTIONS
1. Preheat oven to 375°F/190°C.
2. Add a bit of olive oil to a shallow baking dish and arrange the peppers in the dish standing up.
3. Crack 2 eggs into each pepper.
4. Add about a tablespoon of diced tomato to each pepper, followed by the ham, green onion, and dill.
5. Gently mix with a fork.
6. Bake for 35 - 45 minutes.
7. Remove from oven and top with the grated cheese.
8. Return to the oven until the cheese melts, about 15 minutes.
9. Serve hot.
