This easy vegetarian dish comes together quickly and makes a delicious lunch or dinner all on its own, or you can serve it as a side dish with any meat, fish, or poultry entrée.
CHEESE AND MUSHROOM CAULIFLOWER STEAKS
INGREDIENTS
• 3 tablespoons olive oil
• 1 tablespoon butter
• 1 head of cauliflower, cut in 3/4" (20mm) thick "steaks"
• 8oz (227g) mushrooms, sliced
• 1/2 yellow onion, diced
• 1/4 cup (60ml) sour cream
• 1/4 cup (60ml) water
• 1/3 cup (50g) mozzarella cheese, grated
• Parsley (optional)
• Salt and pepper to taste
INSTRUCTIONS
1. Preheat oven to 375°F/190°C.
2. Add olive oil and butter to a skillet set on medium-high.
3. Season with salt and pepper and sauté cauliflower steaks until golden-brown on both sides.
4. Transfer steaks to a baking sheet to rest while preparing the mushroom mixture.
5. In the same skillet, sauté mushrooms on medium heat until most of their water has been released. Add onion and continue to cook until softened.
6. Stir in sour cream, water, and parsley.
7. Spoon mushroom mixture onto cauliflower and top with grated mozzarella.
8. Bake until cheese melts and is golden-brown in spots, about 15-20 minutes.
9. Garnish with more parsley and serve.
