I have absolutely no idea why I'm on a binge train with Gordon Ramsay, not even sure how it started (although it was very recently), but I love his vids!

I'm glad I found this channel so my view of Gordon changed, I thought he was the evil him self. But seeing him here, his interaction with his children and mom has made him human for me. He seems like a awesome man, humor, loving to his family and just a regular guy. And his mom is adorable!

I developed a variation of smoked brisket that uses the same traditional French and British principles of roast beef. I dry brine overnight, then coat it with spices and a layer of mustard. The mustard helps form a beautiful crust, and keeps the moisture inside the meat, which lets me do long cooks without having to wrap the meat in butcher's paper to protect it. Those long cooks, 12, 16, and 18 hours, really makes the meat incredibly soft and tender, and the mustard stops it from drying out.
