It's Britain's most famous dish. Fish and Chips! I'm sharing my recipe that I cooked for the palace staff (part 1) and then here (part II) The Queen's fish and chips recipe, a little more fancy! Fish and Chips was on the menu every Friday lunch at the palace and we cook for several hundred staff. Even the chefs looked forward to Fish and Chips Friday.
You can enjoy fish and chips with tartar sauce (though in classical French cuisine that would only be served with breaded fish) or ketchup. My favorite is 'ladling' Salad Cream on the chips with Malt Vinegar and HP Sauce mixed with a little Malt Vinegar to make a sauce similar to the one they serve on the fish in Scotland. Definitely would rather have the battered fish with chips. The panko-crusted fish sounds wonderful, too, but I think I'd rather have it with different sides. Wild and brown rice, perhaps, and some grilled asparagus.

As a kid in the 60s fish n chips were a treat we looked forward to each Friday. We always asked for an extra large portion of the scraps, somehow they were the best part of the meal, lol. I wasn't a fan of mushy peas, I preferred to just have the fish n chips, salt NO vinegar and a round of bread and butter. Washed down with big glass of fizzy pop, preferably Dandelion & Burdoch. And a big lengthy belch to piss off Mam, hahaha. Back then fish and chips were deep fried in beef dripping, none of your vegetable oil malarky. Oh and they had to be eaten out of the newspaper they'd been wrapped in, it was the law, hahaha.

I live in Canada, and the fish and chip shops in my hometown used to wrap their fish and chips in newspaper. Nowadays, the fish and chips come in a paper box and wrapped in wax paper to prevent the box from being made soggy by the grease.

@@redyellowpink01 Of course they get good healthcare but so do regular people and I can't say the current queen was coddled and doing nothing, she drove trucks in the war and mended them. As we know these days, doing nothing shortens your life. I remember from another episode on chocolate cake that she also only ate the smallest piece of that. Not prone to selfindulgence then.

I like this technique because it doesn't require a heating a gallon of oil or a deepfry setup, just an oven.

@@PrivateEyeYiYi I didn't like the video because it wasn't anything like the fish and chips I grew up with. The Queen's version couldn't even be called "Fish & Chips* with Panko breading, taragon sauce, and rectangular potatoes. I'm pretty sure chippies don't fry the chips twice (ours didn't) and putting salad cream on them is a rip off of the Dutch and Belgian frites that come with mayonaise or frit sauce. I started to use salad cream after a school trip to Holland and everyone thought I was crazy. Finally, having the menu in french so pretentious.

In Louisiana we typically deep fry catfish but the classic deep fried fish and chips that you folks have in Great Britain are also hard to beat. The best fish and chips that I've ever had were in Alaska, but hopefully soon I'll be able to add Great Britain to that list of best places. God bless you Chef and be well.

I once ate catfish in Switzerland....pangasius....it was superb, I ate two main courses because the waitress could see my love of the dish...she bought me a second for free!! I love how food inspires passion.

He still adds some Salad Creme at the very end. I Really like this chef. He’s so down-to-earth, unpretentious, yet super-skilled and highly capable in his profession. Really “WYSIWYG”. Whether he’s making me poached eggs on toast, or Lobster “au beurre café de Paris” (possibly my favourite dish Ever!), I feel like I would be in very safe, capable hands. Now, I just need to work out how I get myself in this situation, where Chef Darren McGrady is cooking just for me, for some reason. Hmm… tricky… 🤔

I make the "Queen's" version at home quite a bit, sans the hollandaise. It's one of those dishes that's relatively cheap and simple to make, but still looks like a million bucks. A lot of restaurants here in North America serve some variant of it. Nothing beats the traditional though. Halibut is common in Eastern Canada, but it's gotten way too expensive. Haddock is more common now, though some places use Yellow Perch as well.

I think I would like: Queen's style chips with traditional fish. Also... Fun Fact for those who might be wondering why the menus in an English Monarch's palace are in French: when Normandy took over England, the situation eventually reversed itself as William The Conqueror's line came to see themselves as independent of the French Monarchy and came to control some two thirds of modern France's lands in what became known as the Angevin Empire. To this day, the English Monarchy's list of titles still includes 'Sovereign of France'. Also, due to the victory of Normandy over the Anglo Saxons, it just meant that the higher classes of England were, for centuries, technically French nobility.

I love the traditional beer battered ❤️. I live in Buffalo NY and every Friday here restaurants do a fish fry! And I love them! I don’t know if it’s an American thing but we eat it with tartar sauce and instead of mushy peas is always cole slaw. I love peas though so I think I’d love mushy peas if I ever visit the UK 🇬🇧 Great video Darren as always!!

In America, a few years back, restaurant chains were mandated to put caloric information on menus. I worked at one and the "grilled chicken salad" had 1400 calories while the loaded up burger had 900. It was shocking but food is decieving. I'd be curious to know how much healthier the Queen's version actually is. There's more butter, more egg yolks, more breading etc in her version so I'm thinking it's not any healthier. Might be worse. Tbh.

As a yank that has spent some time in Derbyshire, finding a good “Chippy” or “Curry house” is fairly easy. I like mint sauce with peas, and (gasp) tarter sauce!

I like them BOTH!!!! I would alternate from week to week!! What I LOVE is you give EVERY detail related to each recipe! How in the WORLD do you accomplish each of the queen’s chips so absolutely uniform? My guess is it takes several YG potatoes rather than just one. I am an American lifetime Anglophile (Maiden name, Browning)and I have always sought to locate any place where I can find some fish & chips prepared the true English way. I’m considering trying your recipe(s) myself, though I’d rather go out for them. THANK YOU!!!

when we were kids in the 70s we used to go to our chippy and ask if there were any scraps and Michael the Greek owner would scoop up all the bits of batter and wrap them in a piece of baking paper for us, TREAT!

I remember reading that Prince Phillip rarely liked to eat with the Queen because she has such a bland palate. I think this dish illustrates that perfectly. The traditional fish and chips looked far more flavoursome.

I miss the fish and chips we had on our visits to Ireland. The little shops where there wasn't even tables in the shop..just a counter up front and you paid and walked out with a brown bag full of goodness. We could eat them everyday. Thanks for the video to remind us and btw, the Queen has no idea what she is missing not eating f/c the traditional way. Great idea for other cooking videos..how you make dishes normaly and then how the Queen likes them..thx again.

Both versions are too fancy for me. Not putting them down mind you, just saying I prefer even a more simple one. Catfish breaded in corn meal and deep fried. Served with French fries and a garden salad on the side. I personally don’t like a lot of spices that cover the taste of what I’m eating. And no need for sauces. Oh, and sometimes I like ketchup to dip the fries in. But not always. You can take the girl out of the country, but you can’t take the country out of the girl. That’s me! Oh, I do love your videos though. 💕

My Dad was from Bradford, Yorkshire. He married my Mom in Victoria, BC Canada. He would buy cod and make fish and chips every few months for us. Loved this! His fish batter was very light and crunchy like yours. Being North American , we use ketchup on our chips and I have to have malt vinegar my chips. I also sprinkle a tiny bit of that vinegar over the fish then I like a thin layer of tarter sauce over the fish. YUM! Definitely prefer traditional! Here that is a fish dinner we would serve with mashed potatoes, veggies

Chances are that was how someone (probably the chef on camera) chose to serve them. Remember that they were also making 200 portions of the same thing without the special cut. So no potato was being wasted. The "ends" were served to staff.

Definitely the staff fish and chips, but since I’m a vulgar American, ketchup on the chips and homemade tartar sauce for the fish! Great video. I did a stint as a chef at a upper crust fly fishing Orvis Lodge. One night the owner, a multi-millionaire brought a bunch of his friends to dine. After the dessert was cleared away, he came back to the kitchen and told me this was one of the best meals he had ever eaten! I don’t remember driving that mountain road home, my head was too far into the clouds!!!

It seems like either would be delightful. However, the Queen's version would be the best option if one were eating with the Queen (back when one could). I would NOT order the Queen's dish if I were eating with the staff and would not regret it a moment as I would enjoy being myself eating fried food. It would be the staff version for me at home and for my guests.

Being from Newfoundland Canada. We love our fish and chips. It do have to be cod. We get excellent fresh cod fresh out of the water...and it do make a difference
