If you don't get your roast potatoes right it can bring down an otherwise excellent meal. They are simple to make and require very little hands on while they are cooking.
I highly recommend a baking tin with sloping sides as you can turn the potatoes over by shaking the tray rather than individually. Beware though as it will contain hot fat.
I used Maris Piper potatoes which are floury when cooked. Don't use waxy potatoes as they wont crisp up enough. Get your fat smoking hot before you put the potatoes in and make sure they are all covered in fat before putting them in the oven. Shake every ten minutes and they should be done in around 40 minutes, although it depends on the size of the potatoes.
