I’m from Mississippi, and I have a cousin who moved to England and married a guy who owned a fish market. When she found out that crawfish are an invasive species there, she told him to have his guys go out and catch as many as they could. While they were doing that, she made up the best Cajun crawfish boil spice mix she could come up with, so when they got back with the crawfish, she boiled them just like these. They absolutely loved it.

@@sandybritches Also, if you throw corn in there, use frozen corn and use that at the very end. It cooks the corn while cooling all of it down a tad. And mushrooms are excellent in there. I like having so many sides in there, you can have a separate meal from it alone. And if you throw hot dogs in there, use the cheap ones, it makes them so much better than normal.

Great video guys and you can do this in the UK if you can get your hands on the seafood. I'll give you a good tip... go to a US grocery store while you are there and buy something in the spice section called "Zatarains Seafood Boil". You can get it in a solid form or liquid..I prefer liquid. Get some water boiling with salt, add this Zatarains generously then add the seafood (shrimp, crawfish) to the boiling water and turn off the heat immediately. Let the seafood sit in the hot water for 15 minutes or longer if you want it really spicy, remove from water, cool a bit then enjoy! You can also add corn and potatoes to the boil but let them boil for 10 minutes or so before adding the seafood and turning off the heat. You will love it! I'm an American living in Europe and I bring this Zatarains back from the US when I travel and amaze my EU friends with the results.

I do want to clarify that it wasn’t the Cajuns that created the complexity of these flavors. Creole/Cajun cuisine is a blend of West African, Caribbean, German, French, more recently Vietnamese, and all those people learned from the indigenous how to eat from the lands and waters of Louisiana❤ glad y’all got to experience my culture
@testodude
@testodude 8 месяцев назад
everybody pitched in a little. The Acadians (and other French) brought sauces and techniques, the great cured meat traditions came from the Germans (and the rice farming tradition), the Spanish and Canary islanders kicked in their spice palette among other things, the natives taught them about the edible seafood and wildlife, and so on, and so on. It's a legit melting pot. Note-- the list is not exhaustive, and is not a ranking.

@@testodude I could break this down more precisely but I won’t. I’m a food historian specializing in the cuisines of my blood lineage. I’m very well aware of the contributions but the European people did not contribute as much as they’re being credited for seeing as how for hundreds of years most of them didn’t do any cooking 🤓 important to consider when talking about the development of creole cuisine. Cajun sure.

Sorry, it's not just Louisiana, though the cuisine there is awesome. But crawfish are a delicacy across the Gulf of Mexico, from east Texas to Pensacola, FL. Two quick stories: In high school, the junior and senior classes have a formal dance with gents in dinner jackets and ladies in nice, expensive dresses. I didn't date my senior year (my crush was involved with an underclassman), so I asked our foreign exchange student, as a good, sweet friend - from Leeds, England - to prom. We were politically opposed but loved to banter in Oxford debate (did I mention I went to a parochial school?). Her host family had an extremely nice, old house in one of our town's historic areas. I went to pick her up and discovered that our prom happened to fall on this family's historic annual crawfish boil. They even printed T-shirts for party-goers. On the back of that year's shirt was a big crawfish head, with (in small font) the event and (in larger font, circling the head) "You Want Me to Suck What?" Classic - could have been straight from the Quarter! My date was pretty cool with everything until her (drunk) host "father" came up to her room. I was pinning a corsage onto her, and he asked, "Did you bring flowers??" Wife: "Yes, Honey - the corsage!" Husband: "Did you bring a condom??" Wife: [QUICKLY ESCORTS PISSED-DRUNK HUSBAND OUT OF THE ROOM]. Awesome! I went to college in Mobile, AL, and had a fraternity brother from Harahan, LA (outside NO) - Irish-Cajun. We had separate dues for our big, weeklong party - but for him, instead of paying dues, his parents would come over with 150lbs. of crawfish (live in 50lb bags, must be live), pots, corn, new potatoes, the whole thing (and kegs). Then one night of the party we would have a massive boil - probably the best night of the fest. Except for the pledges - they had to clean up the backyard the next morning, and by that time the smell had... matured. But all of us were pledges, all of us endured the retching smell in 80-degree heat, with a hangover.

One of the best meals of my life. Buddy of mine and I on a cross country motorcycle trip. Stopped at a bar on the coast in Biloxi. Asked the bartender best place to get crawfish. He sends us inland about 15-20 miles to a strip mall with a convenient store, laundry and auto shop. The convenient store had a boil on out back with a line 15-20 people. We lined up and when our turn we asked how many pounds for two hungry guys? The gal behind the counter takes a cardboard six pack tray designed to hold 24 beers and lines it with a clean garbage bag. She then scoops 10 lbs of huge bright red mud bugs into the bag. Eyes wide we pull up ‘Al fresco’ sitting on the sidewalk by our bikes and dig into the delicious boil with some tall boy Abita’s and go to town. Absolutely amazing and memorable meal!
