those madeleines look so good your videos are very soothing to watch. just wondering if the temperature should be same for deck & convection ovens? thanks
Thank you. For Convection Ovens I usually bake slightly lower maybe 15-20 C lower than Normal Deck Ovens as the Fans can make the oven really hot. But with Madeleines I would experiment with the Oven what temp works best with your oven as high initial heat can result in really light and big madeleines but at the same time we dont want it to get too much color as well. If you have a convection maybe bake at 230C for 5 mins and lower to 180C for the rest For a deck 250C for 5 mins and 180C for the rest Thanks!
Tried this out today, the flavors are on point but the oven temperature was too high & the bottoms burned - used a thermometer inside the oven to ensure it was the correct temperature. I think I will try this again at 220 instead of 250 before reducing to 180 & shortening the time a bit. I subscribed and will be trying more of your recipes - looking forward to trying your shokupan and puff pastry / millefeuille.
