This recipe really looks great & I really want to try it myself, but since I don't have a smoker, could you advise me as to the best way to cook these on my Weber Charcoal Grill?
You can use your Weber as a smoker, just create two zones of cooking. Bank your coals to one side of the grill and light just one end. Once you have your temp at a constant 225-250 degrees, place some wood chips or wood chucks on the coals to add a little smoke. Place the pork chops on the side of the weber away from the coals and cook pork chops until internal temp is 145 degrees. If your weber came with the charcoal baskets you can use one of those to hold the coals.
