Smoked Pork Chops | Grilling Thick Pork Chops
I found some 1” thick pork loin chops at my butcher’s this week, so I decided to smoke these pork chops. This smoked pork chop recipe is simple and easy.
First I take my pork chops and put them in a brine - this helps to add flavor into the smoked pork chops and also keeps these chops juicy.
Here is my Pork Chop Brine:
- 64 oz Apple Juice
- 1 cup Light Brown Sugar
- ½ cup Kosher Salt
- ½ cup The BBQ Rub (you can find this rub at howtobbqright.com/bbqshop/ )
Heat 32 oz of Apple Juice in stock pot. Add sugar, salt, and dry rub and continue to heat until dissolved. Remove from heat and add remaining 32oz Apple Juice. Allow the brine to cool before using.
Normally a brine takes a long time to distribute throughout large cuts, but these thick cut pork chops soak it up in a couple of hours.
Place each pork chop in the bag and pour the brine over the top. Place the pork chops and the pork chop brine in the refrigerator for 2 hours.
About 30 minutes before the thick-cut pork chops come out of the brine go ahead and start the smoker. The cooking temperature for pork chops needs to be right at 250 degrees with light smoke. I stick with cherry wood for loin chops but any mild fruit wood is great. If you’re using a charcoal or propane grill, set it up for indirect cooking. We want to slow the cooking down so the bone-in pork chops gradually come up to temp.
After two hours remove the pork chops from the brine and drain any excess liquid. Let the bone in pork chops sit out for 10-15 minutes on the counter before seasoning.
I start seasoning the pork chops with a base coat of The BBQ Rub (you can find this rub at howtobbqright.com/bbqshop/ ). On top of that I sprinkle on a little Montreal Steak Seasoning.
Place the bone-in pork chops on the smoker and keep an eye on the internal temperature. Even though we’re cooking at 250 these pork chops don’t take long. The target temperature for loin chops is 145 degrees, but you want to get them off at 140 to allow for 5 degrees of carry over.
You can expect a 1 ½ hour cook time on these thick pork chops. As soon as I see 140, it’s time to get the pork chops off the pit.
Rest the pork chops for 5-10 minutes before serving to allow for the carry over. The final product is a delicious, thick pork chop packed with taste and moisture.

Malcolm, you've changed my life. Your recipes are so great. Whenever I plan Sunday dinner for the family, I first watch some of your vids. We have basically just had Malcolm Reed Sunday dinner since I got my pellet grill. You're like part of the family. If you are ever in Utah, stop by the house and I'll make you dinner. It'll probably be one of your recipes😆.

I followed the directions to the T, smoked these chops low & slow today with potato bombs on my weber kettle. They were a huge hit. Had a neighbor come out to investigate so I did the neighborly thing & shared a plate. These were awesome. My wife loved them & that's the most important vote for me. Absolutely. I've done probably 6 of his recipes. Everything turned out amazing. I was really amazed by how much flavor pork chops get on the smoker. Never really thought about doing them until I watched this video. Smoked chicken wings will probably be my next recipe this Spring.

Damn, Malcolm, I followed your baby back ribs recipe on my gas grill 10 days ago, and they came out really good. Then last Thursday I got a Traeger for Father's Day, did the same recipe, and they were beyond delicious, best I've ever had by far. Smoke ring went clear to the bone. Next day, I did your smoked whole chicken recipe for a dinner party, and had another hit on my hands. Today, for Father's Day, I'm doing these with full confidence. Thank you, SIR! Update: 10/29/21. I cooked these again last night, only with fresh-pressed cider from Apple Hill near Placerville, CA. Amazing stuff! Thank you again!

I just made these today. It was my first time ever cooking pork chops. I followed everything, and I was making them for my mother-in-law and she was generous enough to let me have one LOL she told me since I cook for her I deserved it. And boy am I glad. This was amazing and this is how I will always make my pork chops LOL I accidentally started smoking them on 225 so they took a little bit longer but the fat was tender, melted as soon as I bit into it, and the flavor was outstanding. Hands-down this has been the best tasting thing I have made in my smoker.

I like the fact that he doesn't slather on a bunch of sweet syrupy glaze onto these chops. Smoked chops are the best, especially the thick cuts. Also, his chops come out moist and juicy. Big thumbs up on this video !

Malcolm, I tried your recipe tonight it it can out great!!...My crew says it was a 10 of 10..I did brained for 5 hours...used 1 3/4 thick port chops and everything went as planed....juicy even after a 1 1/2 hour cooldown....thanks a bunch for your videos

Made these tonight, followed the directions to the tee. I did pull them off at 130 degrees and seared them on the grill. Absolutely perfect, Great flavor!

I used the marinate today on thick sliced loin chops and seasoned as suggested but I cooked them on indirect heat on my gas grill using pecan smoking chips. About 17 minutes total cooking time. The result was moist and delicious, thanks so much. Made for a nice dinner party.

I made these over the weekend. They were the best pork chops I ever made and it got thumbs up from the entire family. I used my Weber Kettle and setup the coals using the snake method to keep an even 275 degrees, and used Cherry wood for some sweet smoke. I'm doing these again this weekend.

Made these this afternoon. Family loved them. The marinade recipe makes a lot of marinade. Only used a little more than half of it. Paired them with some twice baked potatoes on the Daniel Boone.

I have got a Yoder YS 640s and I have never seen anyone use a Yoder with the smoke stack in the down position before. Was that intentional and if so what was the purpose?

Using this method tomorrow. Made up two different brines, one with Tennessee apple butter rub, and one with cane and maple rub. Gonna do two chops with each brine / rub, but gonna let soak in the brine overnight instead of 2hrs. Cooking on a pit boss 820 pro using competition blend pellets.

Awesome video. I'm fixin to to go start my smoker right now. Hopefully be eating some chops in a little bit. I always have a tough time with pork. No pun intended. No matter what I've done in the past it's ended up dry and tough. Now that I've watched the video I know what to do. Big ole thanks from South Mississippi! BTW, I wholeheartedly agree on the Montreal Steak seasoning. I've been using it for years. Can't beat it.

I am from South Africa. The thing is I love a Braai meat and a Grilled one, especially Lamb(Ribs) and a Pork, and I can do them just fine. At home when there's a family gathering, I'm the one who is Braai master, and my family have been giving me some good compliments about my Braai meat. This year I've been thinking of making this Official, I was thinking of selling a Grilled Saucy Pork Chops @my previous University, and I have already counted the profit, and this business it's gonna make a lot of money, but the problem was that I didn't know when to apply the sauce on the Pork Chops, so it's all thanks to this channel, good people wish me good luck for my business or pray for me, so that it may be a success.
