Brown Sugar Tapioca Pearl Milk From Scratch | Boba Milk

Brown Sugar Tapioca Pearl Milk 4~6 servings
Ingredients
50g (1/2c) dark brown sugar
70ml (1/3c) water
100g (1c) tapioca starch
100g (1c) dark brown sugar
350ml (1&3/4c) water
1. Add 70ml water and 50g dark brown sugar in the pan on low heat and stir until sugar dissolves.
2.Once sugar and water starts to boil add 1 tbsp (from 100g tapioca starch) ,stir until it thicken .
3,Remove from the heat and add the rest of tapioca starch and mix well.
4.Knead the dough and make small round peals(5mm~8mm) .
5 If pearls are too soft ,transfer pearls in a flat tray, let it rest for a while to dry and roll it repeatedly.
6.Bring 6 cups water to a boil in a pot and add tapioca pearls and stir to prevent from sticking.
Cook for 15 minutes , remove and transfer boba to a cold water.
7.Add 100g dark brown sugar and 350ml water in a pot and bring to a boil(low heat), add boba and cook until mixture is thick.Check if boba is fully cooked. (15 ~ 20 minutes)

Just made this today in June. What can I say? Superb! The homemade boba is worth it in softness and chewiness. Here are some tips I found if you’re struggling: 1. Use black Taiwanese sugar (found in most Asian supermarkets) Its a reddish-brown smoky sugar that you must use for this recipe (Don’t use commercially sold dark brown sugar) 2. Wait for water and sugar to boil and add exactly two table spoons of starch and cook to elastic texture 3. The dough will look shaggy at first, but it will come together eventually (don’t lose hope!😉) 4. The boba does not expand that much when cooked, so make it around the exact size you want. 5. You really don’t need to roll them into perfect pearls, just roll the dough into logs and shop it. There you have it, if you actually are interested in making this.. 👌

I've made similar boba recipes to this one multiple times and here are some of my tips: 1. Make sure not to leave the brown sugar syrup + tapioca starch mixture on the stove for too long. If you do, it will result in a crumbly or hard dough when you add the rest of the starch. 2. If your dough does end up too hard or crumbly, don't throw it out. Add a bit of warm water to the dough. It may get a bit sticky at first, but just keep kneading until you get a smooth dough. 3. Cut the dough a bit smaller than you think you should. In my experience, the boba expanded a bit and sometimes ended up being hard to get through the straw. 4. You don't have to roll them into balls, you can just cut them into little cubes. 5. Do not skip covering the dry boba with tapioca starch. The starch helps keep the boba from sticking to each other. 6. If you don't want to use the dry boba at that time or want to save a bit for another day, put it in an airtight container and store it somewhere cool and dry such as a pantry. 7. Taste test the boba after 15 minutes of cooking, like how you would test pasta after it cooks. If it's not ready yet, keep cooking the boba until it's the right consistency. 8. You don't have to make brown sugar syrup. You can use honey, maple syrup, fruit syrup, or even just mix in some brown sugar with the boba. When I did online school during the 20-21 school year, during lunch or longer breaks between classes I would cook 5-minute boba and mix it with honey or brown sugar because there wasn't time to make syrup. It still tasted great. 9. You also obviously don't have to make brown sugar milk. You can make whatever drink you want. You can make classic milk tea, fruit milk tea, iced tea, a coffee drink, or any other drink. (Extra Tip: Boba Guys' cookbook "The Boba Book" has a great variety of drink and topping recipes. I really recommend their cookbook if you want to make your own boba drinks.)

Hey guys, I ran into the same problem a lot of people are having with the dough becoming crumbly and un-kneadable. I had to throw out about three batches before trying this added step. If the dough is too crumbly, add water back in a tbsp at a time until it is throughly wet... Like so wet, if I left the dough alone, it would spread out on its on and not hold any shape. At this point, I would put all of that wet dough back into the frying pan and heat it up on med-low heat and continuously stir. At some point, the water will evaporate and the mixture will thicken and pull together into a dough. At this point, you can dump out the thick fog and knead into a smooth ball.

I just did it today and it turn so good! and super tasty! I put ⅓ cup boba ball+⅓fresh milk+⅓black tea. Super yummy. Even my husband said so. This recipe can make 3 or 4 mug. Thanks for sharing!!!

Hey guys I made this pearl on 21/09/19 . Difficulty for me : The dough for me is very hard even after kneading , so I added some water bit by bit and keep kneading and it solved the problem >< Taste test : The pearl is very chewy and it taste really good. If you don’t really want the pearl to be Super sweet , the step where u need to put the brown sugar with pearl dough to boil , put lesser sugar cause the pearl will absorb it a lot. My sibling give the pearl 9/10 so it is really easy and worth to try Thank you for the recipe 👌🏼🤤

3:36 *just fyi, an easier and faster way to do this is instead of rolling it out flat, cutting across and having it get stuck to the knife over and over again, is to simply roll the dough out into a loooong skinny snake and chop down the length of the snake. It actually goes really fast, the pearls are more consist in size and you fuss less with the cutter.* 🤷🏼‍♀️

Milk tea recipe: 20g black tea leaf 5g green tea leaf Optional jasmine 5g Boil in 320ml water Add 30g fructose syrup to shaker and add in arbitrary amount of ice. Add the cool tea and 3 spoonfuls(tbsp) non dairy creamer or dry milk powder and a little splash of evaporated milk. Shake ten seconds, pour over pearls and ice. Or: Use same tea proportions above, 240ml water Stir in 30g fructose syrup Pour over pearls and ice before eyeballing a random amount of half and half into the cup to make it “boba colored”(this is really what we do in tea shops) before placing it in that weird plastic sealing thingy and selling it back to you at a higher unit price than all of these ingredients combined😊😊☺️bubble ☕️

I made this and it taste soooo good. One thing I would recommend that for the sauce you put half of light brown sugar and half of dark brown sugar because it was a bit too sweet for me. Also they become like really big when you boil it so I would suggest to make them a bit smaller if you don't want really big balls. But all in all it was delicious, thanks for this recipe! 😊❤

Thank you for the great recipe! A few people mentioned that you can’t make this in a stainless steel pan. I tried it today and had no problem. Just wanted to let others know in case they don’t have nonstick pans. FYI, don’t start this late in the evening. I made a mistake and started a double batch late one night. I was up til 4 am rolling the bobas.. 🤦‍♀️

I've tried a bunch of boba pearls recipes from many youtubers. Yours was the only one that worked perfectly! The texture is soft and chewy (but not too much!) It's better than store bought boba. Thanks for sharing!!

made this over the weekend and it turned out delicious! for the braising part, i used mostly molasses instead of brown sugar. we also got sick of rolling the boba, so we just left them as cubes and they turned out fine xD they do expand a lot when cooking though, which we didn't expect, so we ended up having to use spoons to eat some of them!

A lot of people were saying it crumpled. Mine turned into an oobleck like substance and I tried to work with it. I ended up successful :) I put it back on the heat and the top was crumbly but the bottom had a dough like consistency! I was happy and just left the heat on and added an extra 1/4 cup water until it turned into a dough. I kneaded it after with starch.

Buy the balls premade. Then you literally only have to cook and boil them in sugar.

Thank you! I followed another tutorial and the dough was a crumbly mess (though I still managed to make boba that tasted great). Following your video to add just a little bit of starch into the boiling sugar water and cooking it until it turned clear and thickened and then adding the rest worked very well. I had a very nice sticky dough to work with!

Tried this today. Worked like a charm. Although I didn’t feel the ice water was necessary. Just run the bubbles under cold running tap water and keep it in water until you are ready to simmer it again in brown sugar syrup.

i made this!! ok so yes it’s VERY chewy and you wanna make sure to roll them into perfect spheres or else it’s kinda weird chewing into them when they’re oval-ish (my bad LOL) it goes well with whatever type bubble tea you like; i personally made green tea with milk and it’s perfectly fine! it certainly tastes like brown sugar but it’s not as strong if you add flavours to your drink. it’s definitely time consuming, rolling each pearl, and depending how much boba you like in your drink, you might want to double the recipe and store the uncooked pearls for another day. all in all, it definitely took time out of a boring quarantine day!

It looks delicious ..But my question is can you cook them longer the first time and add brown sugar at the end rather than cook 15min,rinse with ice water and followed by more boiling with brown sugar liquid? Just wonder...

@P G , after covering with flour I cooked it in medium low heat. I also cooked the boba with the sugar at medium low at first and turned to low heat when it started to thick to prevent from burning. Thank you!

Hi i am from India...I heard abt this tea in a chinese drama... immediately searched for this recipe... got this video... In my country , we are having sago (tapioca starch).... by using this , we'll make PAYASAM in all the wedding occasions... this tea is slightly a modified version of PAYASAM recipe... I only heated the mixture for 5 mins and then put the flower in and it turned out fine for meee. I had the same issue and this work out for me :)

Crystal Low, you should set your fire in low and when it started to boil add a little ( 1 tbsp) of tapioca starch and cook it for for 1 minute until the consistency turns like a glue or paste but still runny,Then turn off the heat and add the remaining starch.Knead the dough while it is hot, if it's too hot let it rest to cool down a bit( not cold).I hope this help.Thank you!

Delcious recipe that made chewy boba. The key is cooking it down in the syrup. I tried a different method that had you just cook in sugar, but it came out a little tough. Time consuming, but worth it.
