This is one of the most popular dishes you can make in a big cast iron pot: Southern style Brunswick stew. This is basically a thick meat stew where you take all of the meat you have available, throw it in a big pot, and stew it in tomato sauce with a lot of corn and lima beans. .And as anyone knows, in order to make Brunswick stew, you have to use a BIG cast iron pot...because if it isn't cooked in cast iron, you can't call it Brunswick stew. The cast iron pot seen here is a #12 sized cast iron dutch oven, made in the 1960s by Birmingham Stove & Range. Big cast iron pots like this are the reason why people use words to describe cast iron such as "tank," "beast," "monster," and this is certainly no exception. This big pot is three gallons in size, and it can eat a regular 5-quart dutch oven for breakfast. And if you ever have the chance to acquire one of these incredible hulks, be sure to do so, because you'll get a lot of use out of it!

Awesome! I go to a Brunswick Stew party every October where it's made in a huge cast iron cauldron. Set in the middle of the yard. It's so big it takes the women 2 days to chop everything and its stirred with huge wooden paddles. Everyone takes bags and bags home with them. I love it.

I learned how to make Brunswick stew in the late 70s from an Americana-sort of cookbook around the time of the Bicentenial. It became a favorite of mine, though I have to confess, it was always made in a stainless steel soup kettle (smaller than your big Dutch oven) and I never made it with rabbit. The think the recipe called for some pasta or noodles to be added and cooked in with the rest of the dish just before serving. I usually used intentionally broken inch-long pieces of spaghetti. Sometimes I'd use mostly chicken, but add bits of leftover smoked ham as a second meat. I need to check my book, but I think the recipe called for a bit of rosemary and other Italian herbs for seasoning, which I didn't always use. It is impressive seeing an entire pork shoulder fit in a Dutch oven with no trouble.

For planning purposes, I recently cooked a 9.65 pound picnic roast as EW used in this recipe. I yielded 5.5 pounds of cooked meat after trimming the skin, and picking the bones clean after cooking. You can expect to lose about 25% in weight.

Awesome video Eric. Mmmmm. We've been having some cool evening's and mornings. Fall weather has finally arrived for us so, this episode calls for a CI Dutch Oven full of Brunswick Stew for our household. I don't have a pot that big, 🤔 guess I'll just have to go buy myself an early Christmas gift. Thanks for sharing another great video with us Eric. Stan

I don't really know the origins of this dish, but whenever I have it, whether I make it myself or in a BBQ restaurant, I have to think that somewhere in the south some pitmaster said to himself" What am I going to do with all this leftover BBQ meat!" And thus Brunswick stew was born. According to me. Could be right. Probably. Might be. Rock On EW!

Can’t say I ever had Brunswick stew like that. I have had it with squirrel and chicken, and while it’s ok, it’s not my favorite. Not sure if this would classify as Brunswick stew where I’m from, but I think I would like it better than “traditional” Brunswick stew I have had in the past.

There's no hard and fast recipe for this dish, and there are lots of variations. The meat, especially, is essentially whatever meat you want to throw into the pot. That's why a lot of people say it's made with squirrel. If you want to use squirrel, rabbit, opossum, or just pork, chicken, and/or beef then go for it.

Never had this as I am from Way down south (Texas).Does not look appealing to me. Just smoke your Butt and put in a little sauce and slap yo bun! Love your videos!

This can not be traditional Brunswick stew without squirrel!!! Also use chicken thighs, they hold up to braising much better than breast. You should also refrigerate beans when soaking, especially if you live in a hot climate, they can and will spoil! Ps this is more of a "Yankee" Brunswick stew. A true southerner would never use canned tomatoes or chicken breast, among other things. 🍻
