BBQ joints across the coasts of Georgia and SC know this rich and meaty stew. Itapos;s almost a whole meal in a bowl with a lot of variations. Jack found a great Brunswick Stew Recipe so we thought we would fire it up to celebrate the Big Game... and this stew is great to feed a crowd at your "Soup"er Bowl party.

I just tried this recipe and as a southerner (North Carolina) I'll have to say it brought back some fond memories. It reminded me of the stews I've enjoyed from family owned BBQ restaurants over the years, and of course for that true southern flavor you'll want to use smoked meats if available to you. The added flavor is well worth the effort! I made this exactly per the recipe EXCEPT for the black pepper, which I reduced to taste. Seemed a little too much in my opinion. I also omitted the red pepper flakes because my dad is a little sensitive capsicum. Besides, I don't remember red pepper in being in any of the brunswick stews served at BBQ restaurants in my area. But if you want red pepper - go for it!

I am a single male who works two jobs and I make a real cheap and simple stew though I'm not sure if it is actual Brunswick stew but it is very delicious just the same. What I do is buy some pulled pork from the local Walmart deli. You can use chicken or beef if you want whatever pleases you. I take it and put it in my slow cooker along with some mixed vegetables, broth or water, Worcestershire sauce, onion powder, garlic powder, salt and pepper, and I like to use bulls eye Memphis style barbeque sauce, just season to taste. I use about 3 quarters of a bottle of barbeque sauce. When I get home the place smells so damn good that I can't hardly wait to eat some. My neighbors have even told me that the smell coming from my apartment makes them hungry so I decided to share it with them and now they make it a lot too. The best part is it is so cheap and easy to make. It is perfect for someone like me who is always on the go and I don't get tired of eating it. It is also good with some cornbread or dinner rolls. When I get the time I plan on trying to make chili with the same ingredients but with chili powder and hamburger added instead of pulled pork. And maybe some elbow macaroni and stewed tomatoes too whatever hits me.

Hardcore truth...Man, do you know how hungry I got reading your comment?!?! I'm salivating!!! I am heading to Kroger's tomorrow to get all the ingredients you listed. Only difference is that I am not a pork fan, but will use tender beef. I just moved back to the south from spending 14 years in Utah, and I can truly say that Utahns have narry a clue about eating good stews and barbeque. It's great to be back where those dishes are indulged.

From their site at gratetv.com Morgan’s Brunswick Stew 1 pound chopped or shredded pork butt 1 pound chopped or shredded chicken 1 large onion, chopped 28 oz can crushed or diced tomato, with juice 1 6oz(small) can tomato paste 1 can lima beans or 10 oz frozen 1 can cream style corn ¼ cup sugar ½ stick butter ½ cup cider vinegar 1 oz Texas Pete 1 oz Worcestershire sauce Juice of 1 lemon 3 Tablespoons coarse ground black pepper 2 Tablespoons salt ½ tablespoon Dried red Pepper flakes Note that I use meat that is already cooked. If you are using raw meats, you can throw them in a big pot or Dutch oven and cover with water. Bring to a boil, and then simmer until the meat is falling apart. Remove bones and other undesirables. After the meat has cooled, shred or chop it up. Add all ingredients into a pot and just cover with water. Bring to a boil and then simmer for a couple of hours. Everything should start to blend together. Stir frequently, to keep the meat from sticking to the bottom. Check seasonings and add to taste. Brunswick stew freezes well, but let the stew cool before popping in the fridge or freezer.

My family owned Harold's Barbecue established in 1947 in Atlanta Georgia. I have not had a Brunswick stew better after trying many different types over the years, and the governor of New York City was given our stew when the Yankees beat the Braves in the World Series. Brunswick stew is a classic recipe if you can get it dialed in.

That looks a lot like my Granny and Grandaddys Brunswick stew. Every year during cold weather they had a hog killing and butchered several hogs. Grandaddy had a smokehouse and he would cure and smoke the hams, bacon and sausage and cook cracklings and strain the lard and use part of the pork along with some chickens and make Brunswick stew in a large cast iron wash pot and then can it in quart jars. It was so good, about the only thing different from your recipe is they put cubed potatoes in theirs. Thanks for sharing it brought back memories great memories. They were both born in 1892 she passed away in 1964 and he passed away in 1965, when my father was in the Pacific 1st Marine division WW2 they would can this in metal cans and mail in to him which he shared with his brothers, they loved it, he passed away March 18,2018 at 95 years of age .

@@BarbecueTricks thanks for the reply, I am pretty sure that if you sent packages to military in WW2 that were in combat the shipping was free. I didn't mention in my 1st reply but my Grandparents also canned other things and sent them to my Father like cookies, smoked sausages packed in lard, peach cobbler, canned peaches, cured country ham and other things. They had peach trees that my father had gotten from the FFA in high school, you couldn't get a better tasting peach than those, there were several varieties and I can't remember what they were, but all were large sweet. And they raised their own hogs, cows, chickens and corn to feed them all plus vegetables, so there was a variety for them.

I'm an ignorant Yankee from Illinois, so I'm just educating myself about Brunswick stew. What I've read about the North Carolina version (with chicken, BBQ pulled pork and potatoes) sounds interesting, though, and probably comes the closest to something I could talk my family into trying.

I know an older man who makes 3 gallons of Brunswick stew at a time. However he grinds his meat up so finally that I just realized that didn't sound so good. Anyway it is so finely ground that when it is done it looks more like porridge. It kind of gives me the willies!
@d.k.6361
@d.k.6361 3 года назад
My relatives in Georgia made it by putting everything, vegetables and then cooked meats, through an old fashioned meat grinder (the kind with a handle you turn), and well as their home canned tomatoes. Then came the spices, esp. crushed red pepper or cayenne. So I know what you mean about the older man grinding it finely.

Nice video fellows, but what you made is Camp Stew. All meats in Brunswick should be ground, and no beans, potatoes, okra. I am 87years old and have made it commercially in restaurant, and since retiring make it occasionally at home.

Jim P...HOT DANG!!! You are a PRO when it comes to Brunswick Stew. Is there a house for sale near you? Or do you, per chance, live near Louisville, Kentucky? I would sell my first born child for an authentic, HUGE bowl of honest to goodness Brunswick Stew. I used to vacation a lot at Stone Mountain, Georgia and at one of the train stops they sold the best B. Stew I ever ate. I would eat a serving at the restaurant, then get a takeout order and eat it later at my tent campsite (warmed up over our campfire). I would love to get your recipe.
