Great video Jimmy and I'm sure the meats were delicious using Uncle Steve's Shakes! You really put the work in on this. I didn't think the meat would fit the roaster but it was perfect! Cheers Bud!
Looks very similar to the way my grandfather made whole hog BBQ (chicken too) on an open brick pit in the backyard when I was growing up down here in Alabama way back in the 60s. He'd hold back some of the hog and chicken to make up gallons of Brunswick stew using a recipe very similar to this one. Oak and hickory were gathered up from our woods using an old David Bradley chainsaw. The hog and chicken were cooked outdoors overnight on the pit and the day after the stew was made up in an old cast iron kettle. Only thing I can tell different is that no beef or seasoning rubs were used, just pork and yard birds basted with an apple cider vinegar/lemon juice/butter mixture heated up in an old pot and mopped on with...what else, a mop. He didn't leave behind any recipes or cooking instructions so this one I'm gonna try.
