Recipe...
- For the sponge:
6 eggs
300g golden caster sugar
300g soft butter
300g self raising flour
Vanilla bean paste
1 tsp. Baking powder
- For the buttercream:
350g butter
700g icing sugar
Vanilla bean paste
Multiple colours of candy melts
- Method:
Sponge:
Cream together the butter, sugar and vanilla until light and fluffy.
Add the eggs one by one mixing continuously.
Slowly add in the flour and baking powder and mix until all is combined.
Bake 400g of mix in each 8” tin (make 3 layers) for 20-25 mins at 180 degrees c.
Buttercream:
Mix the butter in an electric mixer until light and fluffy.
Add the vanilla and slowly add the icing sugar bit by bit until combined.
- Decoration:
To make the brushstrokes melt the candy melts carefully in the microwave or over a bain-marie until fully melted.
Use a spoon or a piping bag to dollop circles onto your tray and then use a large palette knife to swipe and create your brushstrokes.
Leave to set for 10-15 mins before trying to use or move.
Use the brushstroke to decorate your cake using excess buttercream for sticking.
