1 whole chicken
2 tablespoons olive oil
Salt and pepper to taste
2 cloves garlic, minced
1 lemon, thinly sliced
Fresh herbs (such as thyme or rosemary)
Instructions:
Prepare the Chicken:
Place the whole chicken breast-side down on a cutting board. Using kitchen shears, cut along each side of the backbone to remove it.
Flip the chicken over and press down firmly on the breastbone to flatten it. This is the butterfly effect!
Season the Chicken:
Drizzle olive oil over both sides of the chicken. Season generously with salt and pepper, making sure to rub the seasoning into the skin.
Sprinkle minced garlic evenly over the chicken, then place lemon slices and fresh herbs on top.
Marinate (Optional):
