This is the most thorough motorcycle lift table video I've seen, they are probably expensive though so out of my range but at least your getting the truth about them I have a bike that may be almost to big for the cheap table I have but I have no other choice because of my being on disability so I'm just going to have to be careful but I do realize the reality when I see and hear it, great video just don't show it with your mother in law in the same room" LOL".
Def go with the foot pump, I remember servicing my bike in the middle of a hurricane, we lost power for 10 hours my bike was just stuck on the lift, miserable experience!

I’d like to know more about sinking it into the floor. Can you also run a pipe under the concrete to the wall to keep the hose/wires out of the way? What dimensions should the sunken area be, etc?

Tipping over sideways isn't really an issue. What you have to watch out for is putting a short and heavy motorcycle, such as a Goldwing, onto a table that has a front extension panel installed. Front extensions are really only for lifting choppers. If you use a front extension, then you can put far too much weight toward the front of the table and it can tip over forward. It's important to pay attention and make sure you don't do that.
