I got a 3 day unlimited data for $16usd from the Digicel inside of SuperFoods not far from the airport

yes true. the sim cards away from the airport are much cheaper

I was in Aruba last week, and purchased the "7 days in paradise" plan using eSim (my wife uses iphone 14 and it was the second eSim in that device). There was no problem at all, just remember to always select that second eSim for internet access while you are on the island (on the first day i had to go to a Digicel office because i didn't got service after some minutes of purchase, luckily the Digicel offices are open until 5 pm local time). In order to fly a drone in Aruba, you need to call air traffic control for every flight. Unfortunately, you need a local number for call time, so I will probably go for Digicel. Thank you for the clarity.
