Chef, your roux worked its magic, thickening your fricassee to a rich, creamy, wonderful consistency! The meatballs looked scrumptious! Oh, how I wish I could have a few bowls of this dish. Heavenly stuff! Great job my friend! Sous Chef Angel is appropriately named! Aieee!

Love the video great job. I am from Abbeville myself. I am also related to some Bourque's on my dad's side of family the Morvants. Take care and God bless.
Thanks for stopping in Ryan. I was born on a kitchen table on what is now called Fairmont street. My dad's mother was a desJacque from Scott. My grandpa's family came from France via Canada. Take care my friend.
I know exactly where Fairmont is off of John Hardy about just before or after Cherokee. I lived on Maude Avenue nearly 30 years and great grandmother lived on Gertrude.
This is an old Cajun meal I was told. When my family came in from Nova Scotia they made their fricassee using only chickens. Chicken fricassee is still the best, then pork rib fricassee, then meatball. Aieee!
Jonathan Trahan Aieee! Thanks my friend. My grandmother was a Trahan from Abbeville area. I was born on a kitchen table in Abbeville. Take care my friend and thanks for dropping in.
