🍰 Cake base:
3 egg yolks
a pinch of salt
80 g (5 tbsp / 3 oz) sugar
100g (almost a stick) melted butter
200 g (1 1/2 cup / 7 oz) flour
5g (1 tsp) baking powder
10 g (1 tbsp) cocoa powder
Baking mold 18X28 cm / 7X11 inches
Bake in a preheated oven at 180°C / 350°F for 15 minutes
Allow the cake base to cool before assembling the cake
🍦 Cream:
500 g (1 pound) ricotta
2 eggs
80 g (5 tbsp / 3 oz) sugar
1 tsp vanilla
20 g (2 tbsp) cornstarch
3 egg whites
a pinch of salt
80 g (5 tbsp / 3 oz) sugar
Mix egg whites with ricotta cream
Divide the mixture almost in half
50 g (2 tbsp /1.7 oz) poppy seeds
Pour into a smaller portion of the cream
🍑 7 canned peach halves, diced
Assemble the cake like in the video
Bake the cake again in the oven at 170°C / 335°F for 55 minutes
Allow the cake to cool completely before serving
Powdered sugar (optional)
