Calamari can be derubberified by soaking it in buttermilk for 4+ hours, that is what the last restaurant I worked in did. They would fry it to a crispy golden brown (not light brown) and it would almost melt in the mouth. Try it!
Something about that cheese being so thin and watching it melt on top of that warm pasta and calamari marinara got me super exited haha hey Chef Johns your new slogan should be "food wishes for you hungry bitches"
I do suffer from regular anxiety but just watching this recipe eased my mind. I'll give this sea food treat a try some day for sure! One of my fav yt cooking channels
This is about the exact same way I make mine, the farther I moved from the east coast the fewer people would even think about trying this! Love that you put this out. Try a squeeze of lemon at the end instead of cheese some day when you are feeling adventurous & throw in some arugula before you add the sauce. ( or as a base for your stew, maybe minus the potatoes) Back home it was traditional to have calamari fritti with marinara sauce and lemon wedges as an app. Love this stuff & yes its either 45 or 45! Molto bene :)
"The only other thing we're going to toss in at this point is some dry oregano, or some other seafood friendly herb of your choice. You are, after all, the ..." Bob Marley of your calamari?
Dear Chef, My friends and I ate this with squid ink sauce in Miguel de Allende and furtherd the enjoyment with a bottle of prosseco. While it did look like something Clingons would eat, we quite enjoyed the experience. I go to your blog often for cooking inspiration. Thank you Chef.
I've eaten a great deal of calamari, and from my experiences, would claim it is the least "fishy" tasting seafood. It is really quite meaty and chicken-like. I'm not a huge fan of seafood, but *am* a huge fan of calamari. I encourage everyone to give it a try. It is especially good served alongside spicy tomato sauce.
Believe it or not, this is one of my favorite childhood dishes of all time. Mom adds a little cumin to make the sauce more aromatic, other than that it's identical. P.s. I live in the coastal Mediterranean city of Alexandria, we call this dish "Squid Tagine" although we rarely cook it in the earthenware.
I love the way he talks!!!! I don't k ow how to explain how he talks but I love it!!!! If anyone knows a word for how he talks would love to hear it!!!!
Squid - ink noodles looks really good, Chef John. I tried doing baby octopus stew and now I know from your video that I did not cooked it enough time. Thx n great video as well.
Chef John, could you do a recipe with guinea fowl? It's not exactly my preferred food wish, but I recently came into some fresh guinea and would love to try one of your recipes on it.
Would you recommend a wine that's on the dry side or the sweet side? I don't really cook with wine (or seafood) very often... I'm guessing dry but I'm not really sure
I love your videos Chef John. I have tried so many new recipes because of you! Thank you. (but this thumbnail was not great...usually they are so pretty, but... this one wasn't as visually amazing- the recipe is great though)

Hello chef john please reply to this. I was watching an episode of breaking bad and one of the characters made a dish called Paila Marina. I've been looking for video recipes on this dish and I can't really seem to find any. Could you please make a video of how to make paila marina even if it's not authentic it just looked really delicious
I would love to know how this compares, flavour wise, to just butter and garlic fried calamari, or breaded and deep fried calamari. I like them both, while not being a big seafood guy, so this has me curious.
