Ok. I just tried this an hour ago and it came out great but I added an extra step to keep the jackfruit from being soggy. After infusing with the broth, I broiled it in the oven on a baking sheet to dry it out. It was great and not soggy inside.
Just letting you guys know, all these jackfruit meat substitute recipes are made with UNRIPE jackfruit! I’m Southeast Asian and we eat a lot of jackfruit, a ripe jackfruit is soft and orange so make sure you’re not buying ripe ones!

I had the best vegan chicken wings in Montreal that I think were made with Jack fruit at this place called le boucan (it's amazing they have a whole vegan menu )

It is just a regular southern style smoke house style restaurant but I think that could be a plus if you are going with family friends, or significant others that don't want to eat the same way . It's also in a magical area and you can explore around if you are in Montreal...there's adorable stores nestled around and a big salvation army down the street if you like thrifting .

If you're in the UK and think the meat industry there isn't just as bad you seriously need to wake up. We like the taste of meat, but don't want to cause unnecessary suffering by eating it... so we "kill" plants instead and make them taste like it. end of.

Having said that I don't seem to be able to buy Jackfruit in Swansea at present so I won't be trying it any time soon!!
Ok so I made this (deep fried version), and though it was delicious, I think it should be noted that the entirety of the starch/tofu binder may not be needed. I followed the recipe to a T, just halved everything so it wouldn't make as big of a batch. By the time I incorporated all of the starch binder into the jackfruit, the mixture was a little too gummy and soft. If you've ever worked with tapioca starch you'll know the texture. I hoped that it was normal and frying it would firm it up, but nope. It was like fried soggy chicken. I'm going to make another batch soon and adjust the amount of the binder. And I also think it needs something else to firm up the jackfruit mixture just a tad more. Perhaps adding a bit of gluten to the tofu and starch..? I'm not sure.

I had the same problem. It was soggy and gummy. Cutting the recipe in half might have been the problem. It looked so good. I rinsed the jackfruit off and drying it in the air fryer. Then I'll try it again.
Your expressions and hand gestures are just the best. I have decided to go veg/vegan at 59 because of you. I am trying your recipes for the things I will miss most. The first was your Nacho Cheese and it was great. This is the game changer. If it works for me, I'm never going back as fried chicken is my favorite food and was the last meat meal I ate. They're very different. Mary's is better for boneless wings and the sort of breaded/fried style you would see in orange or sesame chicken. This looks better for this drumstick application. These jackfruit types are a looser and more easy to shred chicken which sort of replicates the fatty, loose texture of dark meat. Mary's recipe is denser and more akin to chicken breast.
I tried this recipe. Please be sure you drain the jackfruit and also try squeezing out any moisture from them before putting them in the ricepaper. Also, you need to have a very good oven/airfryer to make this work. When I tried this recipe, they basically came slightly cooked on the outside, and total mushy on the inside
For the water (for the rice paper), I'm going to try some scented water that I made for a ferment. It's infused with pepper corns, pickling spices, bay leaves and garlic cloves. Boiled then simmered, then drained, discarding the garlic, bay leaves, etc. I keep some in the fridge for recipes like this. It would have to be warmed first, of course. I do hope that the chefs who inspired you weren't offended by the statements like "can't we do better?" etc., but probably/hopefully not. Still, excellent job and thanks for sharing.
Off topic kinda. Omg I knew other vegan channels called it “chicken” (Still). I got my first “bad” comment someone saying chicken isn’t vegan so I shouldn’t call my nuggets vegan chicken nuggets. Blah blah haha. It’s for searching purposes;)

I saw sauce stache’s video but I have to be honest. The soy milk skin didnt look as crispy and it was kinda confirmed when he bit into it, it was just soft. Your guys’ first bites were definitely nice and crunchy. Ill try this out.

I made this like a fried chicken sandwich and the flavor was sooo good. I’m so happy you put this recipe out bc I tried seitan fried chicken like 3-4 times and was disappointed each time so I changed course. My first try was mushy but I’m definitely going to do it again & try drying it out a bit in the oven
@@EdgyVeg sorry I probably should’ve specified that I meant the jackfruit in this recipe came out mushy but that was user error 😅 with the seitan though it wasn’t the mushiness I just found I don’t like it haha.

I’m vegan but I hate when vegans say “oh it tastes just like chicken!... I haven’t had chicken in 9 years. BUT this is what chicken tastes like!” lol No... it’s probably not.
I tried it the flavor was fine it was the texture for me that was too mushy Fried mines longer to get a little more texture the air fryer ones had to put in the oil too. A little disappointed

As a recent vegan convert like really recent I tried the jackfruit method and I made jackfruit chicken nuggets the jackfruit was still too soft for me it’s way softer than chicken it looks like chicken but it’s just too soft however I’m more of a gluten fan its a way better meat substitute if you want realism
I did something similar but with banana blossom and I baked it to dry it out first, and then marinaded it in the no chicken broth so it soaked up more.
I’m cook a lot of vegan foods though not a vegan, I only quit dairy 1.5 yrs ago. I did the extra step someone recommended below and baked the jackfruit in the oven to get it more of a meaty texture. Totally nailed it, this is a chicken wing! Amazing job 🙏🏼
Robert Klevens If you use flour, bread crumbs, etc., it’s been my experience that those coatings need to be sprayed lightly with oil, so that the “crust” will turn out crunchy. But,the rice paper crisps up with fast sauté.
Help me out cause I REEEALLY want to like this recipe, I just can’t. I’ve tried twice to make these via air fryer and I just cannot get it to crisp up like in this video. I’ve Done 380 degrees for 15 mins, I’ve done 400 degrees for 10. I don’t get it. The very first one you try looks and literally sounds crunchy. But like. Wtf lol Halp
😩😩my 1st and 2nd attempts were failures. Air fryer- rice paper didnt crisp on 380 x10min. Fried them and my jackfruit is super mushy. I'm not giving up. Something went awry.
I am gonna try this with vegan chicken instead of jack fruit. The one from " Les nouveaux fermiers" a french brand is crazy!! It tastes just like real chicken. I am not vegan but I want to stop eating meat. I am sold.
It's easier for me to dump the jackfruit straight from the can (drained already) into the pot with the seasoned broth and let it boil/simmer. Use a potato masher once the water has nearly all evaporated and it will shred on its own. Saves time.
Y'all think these could be made with oyster mushrooms? I'm aware the flavor and color would be a lot different but I just can't find jackfruit anywhere.
Tried to do the recipe 3 times now and everytime the "chicken" is just soggy, wet, deconstructed at the end. Tried it with tabioka starch, also mixed with saitan in the mix and one with just more starch and less water... Can anybody help???

Yes absolutely. Miyoko Skinner has an old video where she made a seitan turkey and shaped it and wrapped it in yuba( soy milk skin or bean curd skin) rice paper should work the same way
The only vegan food I had that looked like what you made was vegan Drum Sticks🍗 🍗 was at restaurant called, Veggie Castle, in Richmond Hill, Queens, NY and then Greenzenphony at Rego Park in Queens, N.Y. In which I did a vlog on the latter about the Drum Stick & some other vegan food I also got from the eatery. I have not done a Vlog on the Drum Sticks I got from Veggie Castle. I hope to do a vlog on the Vegan food I get from that restaurant sometime in the future. I give The Drum Sticks a ratings of 2⭐️⭐️3/4 quarters✨. Where 1 is bad & 5 is extraordinary. Did you ever have the Impossible Burger from the Cheese Cake Factory? I had it last week for the first time, and it was the best vegan burger I had so far from a restaurant! Wow i made the same thing a couple weeks back after seeing sauce stache’s video! I only had medium tofu and flax eggs on hand. But I’m going to remake with tapioca starch which was my first instinct too. Great vid
