1 thing I love about these films is that u always get a bit of general technique, f'rinstance using the potato skin as temperature test; great! Potato with egg as coagulant as a vehicle for delicious cheese is usually a winner, and these little crispy canapés are a fantastic example. Hey Jamie, wanted to let you know I cooked up those Potato Bombas! Joe’s variation though. 4 Large Potatoes 2 Egg Yokes 2/3 cup of Parmigiana Cheese Sea Salt to taste Pepper to taste 1/3 cup of Finely Dice Canadian Bacon Fried them up and were so delicious. I used Beef Gravy instead of Marinara.
Making these in Italian theme. Grated mozza and parm, a little Italian seasoning and a bit of spice. Rolled in Italian bread crumbs. Yum. Only thing -egg white before bread crumbs like recipe in book or without like RU-vid?
I am lactose intolerant, have been for a long time, older cheeses (like Parmesan and old cheddar) tend to be low lactose. We can get sheep and goat Manchego here, Canada, and I find the non cow milk cheeses don’t cause the same symptoms as cow milk cheeses.
I would definitely add tootpicks or small skewers to make them easier to handle. People may not want to hold them in their bare hands because their hands might get slippery ir oily or drip cheese from their fingers onto their clothing,( unless you're at a picnic in the beach with your swimming togs or casual T's that you don't mind getting covered in sticky food. It would still look good and if the toothpicks face upward suggest an easy way to grab them and get them into your mouth, without dropping them to roll on the floor or get all over their clothes. Cocktail snacks of any kind need to be eay and tidy to eat, otherwise people will be less inclined to eat them,( which is why you shouldn't use significant amounts of flaky pastry as a hand snack, ... too messy. These little balls would still look good and probably get eaten mire quickly if they had ease of " loading".
You not have potatoes at home and egg and S&P I add bit of plain flour and cheese any cheese mozzarella will do or cheddar Plain bread crumbs from stale bread no big deal

Doesn't canapé require some bread? I mean actual bread, not just crumbs. If so, I wouldn't see the point in canapéing this, though it sure seems a great amuse-bouche.
Eggs are getting smaller lol...well not so much that but what used to sell as medium size a few years ago seems more like small size these days.....another marketing rip of!!
