I worked at a family owned Italian restaurant. We'd make the eggplant parm slices ahead. I learned how to one hand crack two eggs at a time really quick. God I hated doing that, dredge in flour, then bread crumbs 47 gazillion times, the into the hot oil. Ah!! Restaurant trauma! I'm kidding, I was 15 at the time so I buried those memories until I make parmesan anything.
