Today I’m talking about the newest rum release from Mount Gay: Eclipse Navy Strength. This is the same Eclipse that you've always known but now at 57.1% abv. Since this is a cocktail focused rum, I asked Derek from the Make and Drink RU-vid Channel to come over and help me try the rum in five different cocktails to see what kind of drinks it works well in and which ones to avoid.

¼ oz cinnamon syrup
¼ oz demerara syrup
½ oz pineapple juice
½ oz lime juice
2 oz Mount Gay Eclipse Rum

3 drops almond extract
6 drops absinthe
3 dashes Angostura
¼ tsp. grenadine
½ oz falernum
½ oz simple syrup
½ oz lime juice
1 ½ oz sarsaparilla (or root beer)
1 oz gold rum
1 oz amber Jamaican rum
