Mike pulls another twist on the American Cream Ale game by trying the new NovaLager yeast strain.
NovaLager is a hybrid yeast strain made via multiple rounds of careful hybridization between clones, make lots of new variants and genetically screening them for the properties they were looking for.
NovaLager ferments even cleaner than traditional lager strains and it does it even at room temperature. In this video we taste a super clean Cream Ale and are blown away by how the yeast and fermentation character are nearly non-existent.

Novalager is a great yeast! I also made a Cream Ale but did a grainbill consisting of 75% Northstar pils, 10% flaked corn, 10% minute rice and 5% carafoam. I also used Willamette hops. This beer turned out really good! Novalager has now replaced s-05 for my cream ales and blonde ales. Cheers!

Hi Boys, loving the channel and I’m slowly working through the episodes. I have some Novalager yeast in my fridge and was wandering what I would brew with it so thanks for the inspo! Three weeks ago after your Mexican Lager vid, I left a comment about the exact 3 yeast comparison you announced! Can't wait. I did a test with Novalager in a German Pils and had the same reaction you're having to it in the Cream Ale. The beer was good, but almost too clean. It was missing that slight sulfer aroma like as you commented here. Quite drinkable, however.Thanks for the videos. Cheers,

Hey dudes, nova is surely getting a lot of attention these days. Seems to be a very viable yeast for higher temp ferments with neutral yeast character. Totally rad idea on the side by side. RIP Anchor Brewing...t'was a good thing for many among us. I hope to get a final torpedo ale soon. the Nova yeast seems to do OK in higher temps, sort of like US 05ish need to brew a bit more to see if could be summer fermenter

Sounds pretty tasty! Sadly all my fermenters are busy at the moment or I'd go copy this one. (Amber with Amarillo/Mosaic on Loki in the big one and a series of hopped Meads in the little ones fwiw). Cheers!

I just tapped my cream ale today, which is supposed to be a Spotted Cow clone. I got a lot less corn on this one and slightly more lager notes and I'm not entirely sure why. Same recipe as always.

Did you think this was more clean/neutral vs other batches made with Chico/US-05 type yeasts? Is there room in the cage for US-05?

At room temperature it has to be brewed under pressure. I just brewed a Warsteiner Pils clone and fermented normally with Novalager at 22c (71f). There is a lot of esters and it has a prominent fruity ale character. Not unpleasant, no off flavours, just strange.

Has the same experience, but give it 2-3 weeks and the fruit will dissipate.
