Overall pretty good brisket. but to me and maybe i'm wrong might have just been the camera, the flat looked a little dry and brittle. the slices that you cut were a tad thick and stiff and really didn't look like it would pass the bend test. The point was very moist and looked very well done just perfect. In my opinion I think when you turned the flat towards the hotter end that was a mistake in trying to power it through to get done. But pretty good cook overall
I don't understand. Every time I make a brisket on my pellet smoker pit boss I never get a bark like that. I've tried 3 times so far and never got a nice bark
